Lemonhead candies always remind me of Elsie. I think she went through a Lemonhead phase when we were in high school. I love just about anything that perfectly blends sour and sweet. Yum!These are lemonhead cookies. Meaning, they have crushed up lemonheads in them. Oh yeah! These are really fun and perfect for spring.Lemonhead Cookies, makes 2 dozen.
1/2 cup softened butter
1 cup sugar
1/4 teaspoon vanilla extract
1 egg
juice from 1 lemon
1 1/2 cup flour
1 teaspoon lemon zest
1/4 teaspoon salt
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/2 cup Lemonheads (crushed in a food processor)
1/4 cup powdered sugar
Cream together the butter and sugar. Stir in the vanilla extract, egg and lemon juice until just combined. Stir in the remaining ingredients (except the powdered sugar). Now form 24 balls from the dough and roll them around on a plate covered with the powdered sugar.Bake at 350ยฐF for 14-16 minutes. These are best if they are still quite soft in the middle. And since ovens can vary, it's a good idea to set your timer for 12 minutes and then just keep a close eye on them the first time you bake these. Warm, a little gooey and fresh out of the oven is the way to go with these!Enjoy these! xo. Emma

Lemonheads are my mom’s favorite! She’s recently had dental work done and hard candy just isn’t happening, I’m totally going to whip these up for mother’s day and send them her way.

I’ve never had lemonheads before (you can’t get them in the UK), but they look a bit like skittles, I wonder if you could make the same things using skittles to make rainbow cookies…?! p.s. I love the photos, they all look yum.

Yummy great styling too. They look delicious..do you think they would work without the lollies? Would you add extra of sugar or lemon to replace them?
My daughter and I made these today for her to give to her teacher for teacher appreciation week next week. However, as good as they taste, they did not look anything like the pics. I knew something went awry when my final batter was more droopy and a little thicker than cake batter than like play doh, like in the pictures. However, I soldiered on and after a roll in the powdered sugar, they held their shape and I baked them as directed. Imagine my sadness when they came out flat as a pancake and forming one large rectangle.
I checked and double checked that I followed the recipe and included everything in the right measurements, so I wonder what possibly could have gone wrong? I’d like to try another, prettier, batch as soon as I can…..any help is appreciated. Thanks!

These are so delicious! I know from other comments that a few people have had issues with making these (I’ve been there – many a baking fail in my past), but I made these this afternoon and ours turned out really well. My kids adore them, and I may need to have my husband hide them from me! Gooey, lemony goodness…
I’ve made these twice now (forgot to check back on the first batch and they burnt) but both times I’ve had to add more flour just to be able to form the dough into a ball. Is anyone else having this problem or is there something I’m doing wrong?
