I love salsa. It’s got to be one of the best snacks in the world. Dips are just awesome. That’s a fact. But then salsa is fresh, healthy and absolutely delicious! I love how you can slightly change up the ingredient list and create so many different flavor combinations. So this week, as I was dreaming up healthy snack options (like these baked edamame and banana chips) I knew I needed to make a quick salsa as well.
2 ripe mangos
2-3 ripe tomatoes
1/3 white onion
1/3 cup chopped cilantro
1/2 tablespoon minced garlic
1 jalapeno with the seeds removed (optional)
1 lime
salt to taste
I make salsa a couple different ways, depending on how impatient I’m being. π If you’re pressed for time then just throw the first six ingredients in a food processor and give it a quick chop. You don’t want to puree the mixture into a smoothie texture (salsa smoothie… um… no thanks). If you have a little more time, you can do this by hand, finely chopping each ingredient and stirring them together in a serving bowl. Last squeeze on the juice from one lime and give a generous sprinkle of salt. Taste and add more salt or citrus if needed.If you can’t find ripe mangos try using 2-3 ripe peaches instead. Peach salsa. Mmmmm. I hope you enjoy this as much as I did, I’m starting to dream about summer. π xo. Emma

Yum! This is how I make salsa, too, but haven’t made mango in a while. Mango (and peach) salsa is so good on grilled pork loin, too!
yum! sounds delicious. i recently made a black bean and corn salsa so maybe i’ll add some mangoes next time and see how that goes. i love mixing sweet with savory!

Ooh salsa is amazing, I love it when it has a bit of a kick to it. I always east salsa with tortilla chips, which one day I’m hoping to have a go at making. I admit I’ve never added fruit to my salsa, so I’ll give that a try next time π

This is a super popular summer side dish for our family get togethers.
We call our variation mango/piΓ±a pico de gallo but it’s pretty similar:
red onion, cilantro, chopped mango and chopped pineapple, seedless jalapeΓ±o and a hint of lime all chopped up and eaten with Julios tortilla chips. I don’t know if you guys have Julios up in Missouri, but you must try some!
yummy more mango recipes! i bought a mango at the weekend (used to just eating the dried stuff) and now i actually have something to make with it as we have a lot of left over tortilla chips. i’ll have to sub the lime for lemon juice tho but should be tasty either way.

We make homemade salsa at home too, but we have a secret trick…add a shot of tequila to the bowl! It gives it a little zip.

I love mango salsa! Actually any kind of salsa is good! Have you ever tried roasted tomatillo and mango salsa? The slight tartness of the tomatillos and the sweetness of the mangos goes great with carnitas.
Salsa is always at the top of my list when i doing summer dinner party’s. This looks so yummy! π

I just wanted to say I really enjoy reading your posts and perusing through all your little crafties. You guys have such an inspiring and refreshing blog. Sort of a little getaway from the normal stresses of life.
I have a problem I would really love some tips for solving if you guys wouldn’t mind. I seem to have an unhealthy need for atleast one (sometimes more) cup of coffee everyday or I feel completely drained and sluggish throughout the day. I also tend to drink it while I’m studying or doing work at the desk because it helps me concentrate and focus on the task at hand. I’m 17 and in high school, so you can imagine how this need for caffeine has got me a little worried. I seem pretty healthy at present time but I really want to be able to stop while I’m ahead to prevent any problems for the future. I was just wondering if you guys had some alternatives for energy or tips for concentration, or even ways to stop drinking so much, so that I won’t have to depend on coffee. I would really appreciate it! Thanks so much!

Dips are really fun to eat, alone or with friends! I love the idea of mixing up the textures and flavor by adding a fruit like mango as the base! Makes for a gorgeous presentation too!

Wooow this seems so good ! I’m in a huge mango mood these days. Have you tried homemade mango sorbet ? You just need to freeze pieces of mango then put in in the blender with a little bit of orange juice or coconut milk. It’s delicious and so simple. π

I love mango salsa! It started my obsession with mangos. You should try some jicama in it, its a Mexican turnip(sweet tasting). It gives it a little crunch in your salsa and makes it even more yummy π
