As we prep for the Red Velvet estate sale next month I can’t help but feel nostalgic about our little local shop and the sweet shoppe. I thought it might be fun to share some of my very favorite basic recipes with you that I used in many of the sweets we served. Two of our most popular cupcakes were the chocolate peanut butter monster and salted caramel. The cake of both these cupcakes was the same chocolate cake recipe. It is still my go-to chocolate cupcake recipe. It’s super soft, and I think it tastes even better the next day (weird, right!?). Because the crumb is so soft and moist I will warn you that these work best as cupcakes, and not standard size cakes or sheet cakes. If you bake this batter in anything larger than jumbo size cupcake pans the cake tends to begin to burn on the edges while the center is still raw. But it makes awesome cupcakes. Give it a try!
Chocolate Cake, makes 24 standard size cupcakes or 1 two layer cake.
2 1/4 cups flour
2 cups sugar
1 cup cocoa powder
2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon vanilla extract
2/3 cup oil (canola or vegetable)
2 teaspoons white vinegar
2 cups water
In a large bowl stir together the flour, sugar, cocoa powder, baking soda and salt. In another bowl stir together the water, oil, vanilla extract and vinegar. Stir the wet ingredients into the dry. This batter is very liquid. You might think you did something wrong but don’t worry! Use a large measuring bowl (or other vessel with a spout) to pour the batter into the prepared cupcake pan so that each lined cup is 2/3 full.
Bake at 350°F for 22-25 minutes, until a toothpick inserted in the center comes out clean. Remove from pans and allow to cool before adding any frosting you prefer. Hope you enjoy this cake as much as I do. 🙂 xo. Emma

This recipe is the one used by my Gram to make all of our birthday treats as kids. I realized when I was going to make it the other day that it’s also accidentally Vegan! Score!

Looks like a great recipe! I’m assuming the flour is all-purpose, not cake flour?
If you use 2 cups sucanat (for the rich molasses taste) in place of regular sugar & add 2-3 tsp of ground ginger with the dry stuff…. It’s choc gingerbread cupcakes, satisfying & full of iron for when Aunt Flo visits!
I know this recipe! My mom has got the same one in an old cookbook. This must be a classic! And yes I agree about them not being very good as cakes but they definitely make yummy cupcakes. 🙂

I just made these today and they were so scrummy! The only vegan cake i’ve made before was avocado cake, so it was great to try a different vegan recipe for a change. I will definitely be making more of these in the future!
Although i have to say, i must have really small cupcake tins or something because filling the paper cups 2/3 full was too much – the first batch had some overflow issues, with a couple of cakes “hugging” each other! But the second time i did 1/3 or so and they all stayed nicely inside their respective cups. Either way, they were all tasty. And due to using less mixture per cake cup, i got a whopping 52 instead of 24!!
My boyfriend will be fat by the end of the week 😉

I am making this now and really wish I could figure out if there is supposed to be baking powder in it or not! It is listed in the directions but not the ingredients. Also, I know the cocoa is sifted in with the other dry ingredients but that is not listed in the recipe either.
