Trey and I received this awesome electric fondue pot from his grandmother for our wedding. I was SO excited! I love fondue. I prefer the melted cheese or chocolate variety myself while Trey is a big fan of the super hot oil kind. As life goes sometimes, it’s been over three months since we tied the knot, and I still hadn’t had a chance to break out our new fondue pot yet. Yeesh. I need to get my priorities straight.

Before we invite friends over for a fondue night I needed to make sure I… well… actually know how to make fondue. This is a SUPER simple beer + cheese fondue. You can use any kind of beer you like, but I highly recommend a brown ale, as the flavor was awesome for this. ๐Ÿ™‚My favorite cheese!Newcastle Fondue

1 clove of garlic
8 oz. shredded gruyere cheese
3 tablespoons flour
1 cup beer
pepper + nutmeg to season

First shred the cheese and combine in a bowl with the flour. Mix it around so that every piece gets coated by flour.

Slice the garlic clove down the center and rub it all over the inside of your pot. Mince the garlic and add it to pot, cook over low heat for a minute or so.How to make cheese fondue abeautifulmess.com Pour in the beer and turn up the heat. Cook just until the beer begins to boil. Now turn the heat down and begin adding the cheese.How to make cheese fondue abeautifulmess.com If you are cooking your fondue in an electric fondue pot use a wooden spoon to stir so you don’t scrap the pan. As the cheese melts add more handfuls until you’ve added all the cheese. Sprinkle in a little nutmeg and pepper. If you aren’t using an electric fondue pot once all the cheese is melted you can pour it into your serving fondue pot.Best sides for cheese fondueNow let’s talk dipping sides for a second. An obvious and necessary go-to is bread. Everybody likes bread and cheese. Duh. I also highly recommend apples (granny smith is my favorite). The sweetness of the apples pairs well with gruyere cheese. Trust me. Then feel free to serve any of your favorite veggies roasted or lightly sauteed.
