If you’ve never had baked oatmeal before, you are in for a treat with this overnight baked apple oatmeal. It’s seasonal, but could be enjoyed anytime. It’s super easy to make, and you can even throw it together the night before and just groggily pop it in the oven while making coffee the next morning. And it’s pretty healthy—maybe not “perfectly” healthy, but I’m sort of convinced that’s not really a thing anyway. I’ll go for something pretty healthy any day. 🙂
I also love that you can easily divide this up into individual baking dishes for personal meal prep (see recipe notes). Or bake the recipe below in a pie pan for 4-6 people, depending if you serve cheesy scrambled eggs alongside this (and you should). Or you could very easily double or triple this recipe and bake in a large rectangle dish for a large crowd. So if your house is going to look like the opening scenes from Home Alone this year, then you may be in need of that size baked oatmeal.
Now I really want to go watch Home Alone. Do I have to wait until after Thanksgiving? Is it sacrilege if I watch it, like, this weekend instead?
My favorite part of this overnight baked apple oatmeal is the apple slices on the bottom. They get all soft and delicious during baking and it’s almost like a super thin slice of apple pie in your breakfast. Yum!
If you have leftovers, just save them covered in the refrigerator and warm them up the next day (or even a few days later is OK). If they get a little dry, just drizzle some milk, cream, or maple syrup over them and you’re in business again. Enjoy! xo. Emma
Overnight Baked Apple Oatmeal
Ingredients
- 1 3/4 oats
- 1/3 cup brown sugar
- 1/2 cup chopped nuts pecans, walnuts, etc.
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups milk
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons butter melted
- 2 apples
Instructions
-
In a large mixing bowl, stir together the oats, sugar, nuts, baking powder, salt, and cinnamon. Finely slice or chop up the apples (removing the core, seeds, and stem) and set aside.
-
In a small mixing bowl, whisk together the milk, egg, vanilla extract, and melted but slightly cooled butter. Pour this mixture into the larger mixing bowl and stir to combine. Then stir in half the apples.
-
In a pie pan, or divided among four single serving baking dishes, add the remaining apple pieces on the bottom. Then pour the oat mixture over the top. You can bake immediately or cover and refrigerate overnight.
-
Bake at 350°F for 30 minutes. Allow to slightly cool before eating. Top with cream, milk, maple syrup or nothing at all.
Recipe Notes
If you bake in individual servings, after baking simply store covered in the refrigerator and rewarm in the oven or microwave to enjoy throughout the week.

I’m a huge fan of granola bars so I don’t know why I’ve never made baked oatmeal before! This sounds delicious and I love that it can be prepared the night before in advance!! 🙂

I really got into oatmeal cups last winter, so I’m definitely going to try this recipe. Is there a certain variety of apples you recommend to use? Thanks!
Not really. I used honey crisp this time but pretty much any would be good, including Granny Smith (my favorites for pie making).
If I’m totally honest I usually have to force myself to eat regular oatmeal…especially since I usually keep it [added] sugar free. But baked oatmeal? It’s always an anticipated breakfast for me! Love how easy it is and how well it travels on busy mornings.
I’m going to try to substitute Swerve with a tablespoon of molasses for this recipe. 🙂
What type of oats did you use
Hi! I make baked oatmeal all the time for meal prep. You’re going to need old fashioned oats, NOT quick cooking.
Thank you for this recipe ~ can’t wait to try it. Do you think it’d work with peaches? Yum!
Hi! I make baked oatmeal all the time. Peach, cinnamon, and nutmeg is one of my favorite combinations! It would definitely work. Yours might just contain a little more liquid than her recipe if you use frozen peaches.
This looks amazing! Who doesn’t love a spicy apple oatmeal for the fall time? So Delish

Hi Emma! I want to make the baked apple oatmeal Friday for a Sunday brunch. Do you think that will work or would it be too long sitting? or are you just reheating?
Loved this baked apple oatmeal!! I made a few modifications but it will definitely be going into my recipe rotation.
