You asked for it! Here's Emma's recipe for Peanut Butter + Honey Cupcakes…
Emma's Vanilla Cake, makes 24 cupcakes.
Ingredients: 2 1/2 cups all purpose flour, 2 cups sugar, 2 teaspoons baking soda, 1/2 teaspoon salt, 1/2 tablespoon vanilla extract, 2/3 cup oil (vegetable, canola or peanut), 2 teaspoons distilled white vinegar and 2 cups water. In a large bowl whisk together all the wet ingredients. In a smaller bowl whisk together all the dry ingredients. Add half of the dry ingredients to the wet and whisk until just combined, repeat with the second half. *Note: This batter will be very wet, a pourable liquid. Fill lined cupcake pan with batter so cups are 2/3 full. I find it is easiest to pour the batter from a small pitcher or glass measuring cup instead of spooning it into the pan. Bake in a preheated oven to 350 F. Bake for 22-25 minutes until a toothpick inserted in the center comes out clean. This recipes makes very moist cupcakes that can be stored in an airtight container in the refrigerator for up to 3 days before consumed. Although they are best the first day.
The Peanut Butter Icing recipe was posted in Cupcake Mixology. You pipe the peanut butter frosting on the cupcakes in a circle and then fill the center with honey. So Delicious! Enjoy.

I’m so intrigued by using peanut oil in a cupcake! It would also be so cute to pipe the frosting in hexagons before filling them with honey to make a little hive!

I love that this recipe is Vegan! Emma, you always have the best recipes. I love it.
Sugar is actually not vegan. It’s processed with bone char. They do have special vegan sugars that aren’t at Whole Foods, etc. Just FYI!

It really looks good! I’m always a bit hesitant to try food made with peanut butter because I usually don’t like the taste but I love honey so maybe this combination would work for me!
It might be a little tricky, but I think it’d be so cute to pipe the frosting on in a rough hexagon shape to look like a little honeycomb.

I tried baking this today…. and it’s pretty good.. but my only problem is that my cupcakes stuck to the paper cups and unless I turn the cupcake inside out… eating it is almost impossible. I even tried oiling the paper before pouring in the second batch of cupcakes. It didn’t work.. which makes me sad because I really wanted to bake this for my friend before he left to Guam. And the cupcake itself tastes really good too. Is it because I used baking powder instead of baking soda? I accounted for the substitution and used more teaspoons of baking powder… I don’t see how this would affect the stickiness of the cupcake though. Or does it? Hmmm……
BTW, I really love your blog. I feel challenged to do new things and try new food… 🙂
i just made these cupcakes and they are soooooo good!! I substituted sunflower seed butter for peanut butter, because i can’t have peanuts. SO DELICIOUS 🙂
