Pecan Tilapia and Baked Brussels

Pecan tilapia with baked brusselsI guess this falls under the realm of easy weeknight dinners, because it's quick, delicious, and healthy enough that you could totally eat this often. The secret to making this dish extra flavorful is fresh garlic!

You thought I was going to say citrus, didn't you. I always say citrus. I'm a citrus freak. 2 Tilapia fillets
1/2 tablespoon butter
1/2 tablespoon olive oil
3-4 cloves garlic
1/4 cup flour
1 egg
1/2 cup pecans
salt+pepper

1/2 cup whole brussels spouts
2 tablespoons olive oil
1 lemonThe best baked brussels sproutsFirst get the brussels going because they will probably take a little longer to bake than the fish will to cook. And we are pro home cooks, so we know how to time things right. ๐Ÿ™‚

Cut the sprouts in half and toss them in two tablespoons olive oil. Place them cut side down on a baking sheet. Sprinkle with a little sea salt. Bake at 400ยฐF for 12-18 minutes. That's quite a range of time but this really depends on your preference. I like my sprouts blackened on one side. Mmmm! If you've never tried this, I highly recommend you do. But if you prefer your sprouts less cooked, simply leave them in the oven for less time.Crushed pecansNext it's time to make the fish. First mince the garlic and set aside. In a food processor (or really good blender) finely chop the pecans. Prepare three plates, one with flour, one with the egg whisked in with a tablespoon water, and the last plate is for the chopped pecans. Season your fillets with salt and pepper. Dip each fillet in the flour (coating both sides) then in the egg and finally dip it in the pecans. Set the prepared fish aside.How to make pecan encrusted tilapiaIn a large pan heat the butter and olive oil over medium heat until melted, and the butter begins to brown. Cook the garlic for 1-2 minutes, until it begins to become very fragrant. Now lay in the tilapia fillets and reduce to heat to medium/low. Cook on each side for 3-4 minutes. Remove to a plate and be sure to scoop out any leftover garlic butter bits to lay on top of the fillets.Healthy dinner ideasServe with a few lemon wedges. That's right!
