I guess this falls under the realm of easy weeknight dinners, because it's quick, delicious, and healthy enough that you could totally eat this often. The secret to making this dish extra flavorful is fresh garlic!
You thought I was going to say citrus, didn't you. I always say citrus. I'm a citrus freak. But this time it's all about the fresh garlic and pecans.If you're not a brussels sprout fan or if you find they are not in season, try a different roasted veggie on the side, like asparagus or beets. If you want to make this meal extra hearty, you you could serve the fish along side mashed potatoes or risotto.Pecan Tilapia and Baked Brussels, serves two.
2 Tilapia fillets
1/2 tablespoon butter
1/2 tablespoon olive oil
3-4 cloves garlic
1/4 cup flour
1 egg
1/2 cup pecans
salt+pepper
1/2 cup whole brussels spouts
2 tablespoons olive oil
1 lemonFirst get the brussels going because they will probably take a little longer to bake than the fish will to cook. And we are pro home cooks, so we know how to time things right. ๐
Cut the sprouts in half and toss them in two tablespoons olive oil. Place them cut side down on a baking sheet. Sprinkle with a little sea salt. Bake at 400ยฐF for 12-18 minutes. That's quite a range of time but this really depends on your preference. I like my sprouts blackened on one side. Mmmm! If you've never tried this, I highly recommend you do. But if you prefer your sprouts less cooked, simply leave them in the oven for less time.Next it's time to make the fish. First mince the garlic and set aside. In a food processor (or really good blender) finely chop the pecans. Prepare three plates, one with flour, one with the egg whisked in with a tablespoon water, and the last plate is for the chopped pecans. Season your fillets with salt and pepper. Dip each fillet in the flour (coating both sides) then in the egg and finally dip it in the pecans. Set the prepared fish aside.In a large pan heat the butter and olive oil over medium heat until melted, and the butter begins to brown. Cook the garlic for 1-2 minutes, until it begins to become very fragrant. Now lay in the tilapia fillets and reduce to heat to medium/low. Cook on each side for 3-4 minutes. Remove to a plate and be sure to scoop out any leftover garlic butter bits to lay on top of the fillets.Serve with a few lemon wedges. That's right! You know I had to get some citrus in there. ๐ A little lemon juice is just perfect over brussels and fish. Enjoy! xo. Emma
P.S. As you can see I paired a little red wine with this meal. Mostly because it's what I had on hand. But I've been really wanting to learn more about wine pairing. Sounds fancy and fun! What about you, is that something you'd be interested in?

I’ve never tried baking brussels, I do that exact prep but then saute them 5 minutes cut side down, 5 minutes flipped with a finish of shaved parm… I highly recommend, I got the recipe from Heidi’s 101 Cookbooks and have never done anything else. However, I am dying to try this, it sounds easier and I too love a blackened b. sprout!

In general, white wine goes better with fish, reds with darker meat like steak. Since you’re a pescaterian I’d recommend keeping more dry whites on hand, but hell, drink what tastes good lady!
