I wanted to create a new signature cocktail for the holiday this year! We’re hosting and attending quite a few parties, and I thought it would be fun to have something special in addition to our “regulars” (hot cider and whiskey, mulled wine, and champagne ice cubes in cranberry juice!). I really wanted to make something with a traditional and nontraditional flavor mix. And so the Peppermint Coconut Cocktail was born.
So, right now you’re either like, “Oh yeahhhhh!”, or “OH nooooo”. If you like peppermint AND coconut, you’re gonna like this! It’s weird and wonderful and creamy and perfectly festive!
Peppermint Coconut Cocktail, serves one
1.5 ounces vodka
2 ounces Peppermint Schnapps
1.5 ounces half and half
2 ounces unsweetened coconut milk
1 squirt Cream of Coconut
Combine all ingredients in a cocktail shaker with ice. Shake-shake-shake. Bonus points if you shake while you sing Shake It Off. Serve over ice. Garnish with sprinkles and candy canes if you wanna be fancy… I know you do!
Enjoy! I hope you guys have the BEST holiday ever! Love ya- Elsie

What a neat idea! I had honestly never thought of using coconut milk in a cocktail before, despite my deep love for it. I adore how you styled the glasses too with the little candy canes off the sides. One day I will be cool enough to have fancy cocktail parties with drinks like these!

It’s really cool that coconut is a part of this cocktail! Usually I associate coconuts with tropical-ness and summer, a season with a little more energy and pow. I imagine adding coconut to a winter cocktail adds a nice little zing on the tongue 🙂 -Audrey | Brunch at Audrey’s
You had me at peppermint! During the holidays, I’m pretty obsessed with any drink that has peppermint. Have you tried coconut milk with Kahlua & vodka? So delicious. :] // http://www.itscarmen.com“ ▲

this sounds great!!! but can someone tell me how to make this without alcohol?
It tastes better made with 1.5 oz rum instead of 2 oz vodka. I also added 1oz more coconut milk to make it a little more creamy and shaved andes mints ontop. Try it out! Original recipe tasted like straight alcohol and not enjoyable.
