Summer is all about party foods, am I right? What excites me the most about going to a picnic or pool party is really what’s being served at the snack table more than anything else. We’ve done our fair share of jello shots here at the blog, and I always have some extra love for the ones that are really cute as well as really tasty, so I thought a pink lemonade version of a lemon drop shot would be just the thing to get this summer started off right. They may look complicated, but they are super easy to make – I promise!
Pink Lemonade Jello Shots, makes about 9 lemon halves you can cut into wedges
2 packets of unflavored gelatin
1 cup pink lemonade
1/2 cup regular vodka
1/2 cup lemon vodka or Lemon Eddy
5 lemons
Cut your lemons in half and use a spoon (a serrated grapefruit spoon works great if you have one) to scoop out the insides as much as you can.
Heat the lemonade in a pan over medium heat and stir in the packets of gelatin slowly until they dissolve. Add the lemonade and gelatin mixture to a bowl and pour in your vodka liquids. Stir until combined.
Transfer the liquid into a pourable container and place your lemon halves into a muffin tin to keep them upright. Pour in the liquid until each half is full and refrigerate for 4 hours or until set.
Remove the tin once the lemons have set and slice into slices right before serving. Enjoy!
How pretty are these all sliced up? Such a cute look for a summer party. You can make them with water instead of vodka if you’d like them for a kid’s party instead. If making these for an outdoor party, I would serve them on a bed of ice on a cute tray to keep the jello from melting too quickly. Cut them into bigger or smaller slices depending on the serving size you want, and watch them disappear!! xo. Laura

Can I use all plain vodka instead of half lemon vodka?
Definitely! The lemon flavor just won’t be as strong.
What do you do with the actual lemon ? Juice and carvings do you use it at all for the shots?
Very bitter tasting. I would suggest using lemon flavored jello instead of unflavored gelatin
If I made these two days before, but didn’t slice them into wedges till the day of, do you think they would still be ok?
I made these last night and went to cut them and what a mess. It doesn’t look like your pictures and they are so bitter. taking to a party. Still going to take them, but made some in disposable shot cups. Added a cup of sugar and a whole can of pink lemonade consecrate. Taste better to me, not sweet. Very disappointed in the way mine turned out, followed your recipe exactly and I have been making jello shots for years. Maybe someone else will like them, just to bitter for me.
For how long could this stands in the fridge
I have never made jello shots before, and I made these for a party this past weekend. They were a hit! After reading the reviews, I changed the gelatin for flavored jello. They were a bit sweet (for my taste), but people loved them. Personally, I would probably do one flavored packet and one unflavored. Enjoy, all!
