Pomegranate Rum Punch

Pomegranate Rum Punch (click through for the recipe!)     There is no denying that tropical drinks are pure fun. There is a time and place for them, where no other drink can compare. Beachy vacations, poolside cocktails, restaurants with weird/confusing menus and, of course, bad days in the middle of winter when you need a dose of summertime—in liquid form. 4Pomegranate Rum Punch, serves one 

6 ounces pineapple juice 
2 ounces white rum
2 dashes Elumakule bitters
Juice of half a lime
4 mint leaves, broken
2 ounces pomegranate juice 
1/2 tablespoon cream of coconut 
 
Combine all ingredients into a shaker with ice. Shake and serve in a collins glass with ice. Garnish with a pineapple slice and mint leaves. When I was working on some boozy juice recipes one girls' night a few months ago and this was our absolute favorite. The pomegranate juice gives it this pretty plum color, but the flavor is more like a piña colada or a mai tai. If you like tropical juices I promise you'll like this one.
