Guys, have you ever had puffed quinoa? I recently discovered it (it’s not new, I just hadn’t heard of it before) for myself and am totally obsessed! It makes a great breakfast with just a little almond milk and fresh fruit. And I recently decided to experiment making rice krispie treats but sub out the rice krispies for puffed quinoa—new favorite for sure!
The main difference is that puffed quinoa treats are not quite as crunchy as rice krispie treats. They’re slightly softer / more chewy. But other that, they’re pretty much the same classic treat with just a little more nutrition, mainly more protein and less sugar—but they’ve still got plenty of that marshmallow goodness. 🙂
I bought my puffed quinoa online (big, bulk bag of it). You may also be able to find it at health food or specialty stores. You CAN puff uncooked quinoa at home, but it will not get as big and puffy as commercially puffed quinoa. I’m not sure how they get it that puffy, but when I puffed some quinoa at home because I was curious, it popped and puffed but no where near as much as the puffed quinoa I bought. Just FYI. 🙂
Quinoa Krispie Treats, makes around 15 squares.
3 tablespoons butter
1 tablespoon coconut oil
10 oz. marshmallows
6 cups puffed quinoa
handful of sprinkles, optional
In a large mixing bowl, measure out the puffed quinoa and set aside. Lightly butter a 9×13 inch baking dish and set aside as well.
In a large pan, melt the butter and oil over low/medium heat. You can use all butter here if you like. I was just experimenting subbing out some with coconut oil, and it was really good. So I’m sharing. 🙂
Once melted, add the marshmallows and stir with a heatproof rubber spatula as they melt. As soon as they are melted, pour over the quinoa and stir so all the pieces get coated with the marshmallow. Transfer to the baking dish and use the rubber spatula to press into place. Toss the sprinkles over the top and lightly press into the treats.
Allow to cool before cutting.
These are very addictive, so have a plan to share! Any treats you don’t consume within the day, be sure to cover in plastic wrap or transfer the treats to a big ziplock bag. These will get stale if you forget and leave them out on the counter overnight. Not that this happened with this batch… I would never do something as forgetful as that. 🙂 xo. Emma

What a great idea! I’ve had a bag of puffed quinoa in my kitchen for a while now. I add it to my boys’ yogurt, but have been trying to think of other fun snack ideas. This is perfect!

Yes, I have know of puffed quinoa cereal. But I never thought to add melted marshmallows and top with happy sprinkles! Duh, of course! Thank you 🙂

What a great idea and pretty photos. I have a question on your action sets. Did you use the set for PS or LR? It’s probably too much info to add which lens and settings you used and which actions in the post but I’d love to know. The photos for your balloon arch were also gorgeous! Are you using the 35mm or the 50mm? Just curious. 🙂 I’m deciding which action set to purchase for food photography in particular.

I’ve definitely seen puffed quinoa incorporated into some of the cereal in the organic section of my local supermarket but never thought twice of buying just puffed quinoa itself and making it into cereal treats. How brilliant! I also love how the recipe calls for coconut oil.

I’ve ever had puffed quinoa but I think it’s time I changed that! These look and sound absolutely wonderful!
Here is why your puffed version is not as big and fluffy. Commercial puffed grains are not actually popped. A cooked slurry is made of the grain, and then an extrusion machine takes over and creates the puffed “grain”.
Wait but how much puffed quinoa do you need? I’m not seeing this in the recipe..
