Oh man, if you haven’t had fruit pizza before, you are in for a treat! It’s actually a sugar cookie for the base of the “pizza” and strawberry cream cheese for the “sauce,” so it’s in the dessert category for sure. Since I usually use a wide array of colored fruits on my fruit pizzas, I thought it would be the perfect dessert to do in the shape of a rainbow and really let those natural colors shine! Here’s how to do it:
sugar cookie dough
strawberry cream cheese
shredded coconut
fruits of all colors!

Roll out your sugar cookie dough into a crescent shape on some parchment paper. You can make the size of the rainbow as big or as small as you want, it’s up to you! Once your dough is rolled into an even thickness (about 1/4″ thick), you can use different size bowls to make slight rounded indents so you have a path to cut along for your rainbow shape.When you have your middle section of your rainbow cut, create little bumps for your cloud cluster sides. The ready-to-bake sugar cookie dough puffs outward quite a bit, so you’ll want to cut your rainbow a little smaller than you want to give it room to grow.Place your parchment paper onto a baking sheet at whatever temperature the dough recommends. I would set it for the max time and then keep checking every 3-4 min to see if it needs a little longer since one giant cookie takes longer to bake than a bunch of little ones. Let your cookie cool completely.While your cookie is cooling, cut up your fruit! Depending on how many colors you have and what shape the fruit is you may want to cut them in half, leave them whole, or cut into strips. Once your cookie has cooled, you can ice it with the strawberry cream cheese and start to place your fruit on top! When all your colorful layers are added, create your fluffy clouds with some coconut at each end and you’re ready to serve! So pretty, so fun, so tasty! The sweet sugar cookie with the creamy strawberry cream cheese and the juicy fruit on top is one of my favorite deserts for sure and the shape of the rainbow just pushes it into the adorable zone, if you ask me. This would be really sweet at a kid’s birthday party too if you had a rainbow theme, but I don’t think you’ll have to convince adults to have a piece either. xo. Laura

So cool, I really love it, the rainbow shape is so beautiful. You’ re so creative. That í the pizza I want to try the best. I love pizza so much but it’s the fas food, so I just it pizza one per two months. But now I can it alot because it há al ot of nutrients, make my skin well.
