Ruby Citrus Mojito

Ruby Citrus MojitoIt’s good to have things to look forward to. For me, it’s usually my next mini vacation with Jeremy. But sometimes when those are too few and far between it works to focus on the little things like sleeping in and brunch on the weekends or our next big house project. And, on rough days when I need even more things to look forward to…there’s happy hour!

Close your ears if you’re from California or Texas (and all the other warm weather places), but it’s really realllyyyyy cold here right now. Not every single day, but on and off in a way that’s really a tease. Sometimes cold weather bums me out and for those days there are blankets… and mojitos! Let’s call it a game of pretend.

Ruby Citrus Mojito, serves one.

2 ounces white rum
Grapefruit simple syrup *recipe below
Juice of one lime
10 fresh mint leaves
Club soda

In the bottom of a tall glass add 6 mint leaves and a little bit of simple syrup. Muddle the mint leaves until they are crushed (and smell amazing!) Next, add rum, 1.5 ounces grapefruit simple syrup (you can add more at the end if it’s not sweet enough for your taste), juice of one lime, ice and top off with club soda. Stir and taste. Add more syrup if you like a sweeter cocktail and stir again. Garnish with grapefruit slices and fresh mint leaves. Enjoy!

*To make the grapefruit simple syrup, simply combine 1 cup grapefruit juice and 1 cup sugar in a small pan. Stir on medium heat until the sugar is completely dissolved. Refrigerate in an airtight container. Keeps for two weeks or more.  Ruby Citrus Mojito Muddling is my favorite part. It smells so good! Ruby Citrus Mojito Deeeeelicous!
