Happy Cinco de Mayo friends! If you're not sure what to do to celebrate today might we suggest a few things. ๐ Celebrations often call for cocktails so try making a delicious and refreshing mojito or cucumber margarita! If you're in need of a shareable dip try jalapeno + kale guacamole or mango salsa. Yum! Or if you are in the mood to throw together a quick meal try a fajita salad or black bean tortilla soup. One of my all time favorite foods is fish tacos. I'd like to say it's a summer time favorite, but truth be told, it's an all year round favorite. To me the secret to good fish tacos is two fold. First, you must fry the fish. I'm sorry but baked fish just won't do for me. And second, you must top them with a creamy sauce and cabbage. If there isn't almost coleslaw on my fish tacos then forget it! ๐Let's talk about the fish first. Even though I like my fish fried I am a fan of going easy on the coating. Most fish frying batters you can buy turn out fairly thick, often with a course texture like cornmeal. I like that for other purposes, but not fish tacos. Once your fish (I used Tilapia fillets here) is thawed lightly season them with salt and pepper. Now dip the pieces in flour, then an egg wash (2 eggs whisked with 1 tablespoon water) then back into the flour. Fry in oil at 350ยฐF until the fish begins to float. This won't take very long. Cook an additional minute or two, until the coating begins to brown slightly.If you're not quite ready to serve be sure to tent the fish in aluminum foil to keep them warm for a few more minutes.
For the slaw you'll need: 1/3 head of green cabbage, 1/4 cup mayo, 1/2 tablespoon white vinegar, a sprinkle of sugar and generous sprinkle of salt + pepper.
Chop up the cabbage into thin strips. Stir together the mayo, vinegar, sugar, salt and pepper. Pour over the cabbage and stir until each piece is coated.You may also want to chop up a few onions, fresh cilantro and tomatoes (if you remembered to buy a few… unlike me). Add some fresh avocado and squeeze on a little lime juice. Enjoy these! xo. Emma + Elsie

I never liked fish tacos until I had them fried for the first time. Now I will only eat fried fish in fish tacos — I have a local favorite here but they don’t serve them in winter. Just another reason to look forward to summertime! I love them with a bit of fresh lime, some spicy chipotle mayo sauce and coleslaw, just like you described! If I was braver about cooking fish (and we got it locally pretty fresh) , I’d definitely give this recipe a shot!

We have been on a serious taco kick this year and had fish tacos yesterday too! We (re)discovered that we could make our own tortillas, with about as much effort as warming up packaged tortillas in a pan and they are so good. So easy that my 3 and 7 year old are in charge of making the tortillas on taco night. You just need masa, water a pinch of salt and a tortilla press (less than $15).

I do fish tacos on a weekly basis. We like to make a beer batter that is 1:1 ratio of dark beer and flour then spice it up with some homemade taco seasoning. Some corn and cilantro salsa and a squeeze of lime on your taco really makes the dish.

It always amazes me when I go eat out with my friends and they see fish tacos on the menu and flip out. They seem to be getting pretty popular, which is always a learning curve to me, because I grew up with fish tacos and any good Mexican meal would have a variety of meats for a taco (ever had a spam taco? or a barbacoa aka cow tounge taco?).
I remember eating fish tacos when I was younger for Lent since there was not much we could eat on a Friday. We’d have it sauteed like fajita meat, with my mom’s homemade salsa and lime juice, cabbage/lettuce and cheese. My grandmother was a strict Catholic and there was to be no meat eaten on ANY Friday, so my mother would have fish tacos as well growing, they’d catch the fish in the lake near their house and cook them! While my mother is more lax regarding the meat on Fridays thing, I do remember her doing the same to some shrimp and chopping them up for a shrimp taco.
Nifty side note, Aztecs, when they had an abundance of fish, they’d make tacos out of corn tortillas, beans and cooked fish, talk about a good pescatarian meal that is full of protein!
Oh, also, someone mentioned what do you celebrate on Cinco de Mayo.
Cinco de Mayo is better known as the Battle of Puebla, when Napoleon III thought it’d be a grand idea to put a royal in charge of Mexico for France’s interest since Mexico put a hold for two years on all foreign debt.
He put Maxamillian and his wife at the crowned King and Queen of Mexico, and the Mexicans who remember the oligarchy that came of the Penninsulares (people born in Spain living in Mexico) rule did not want any of that.
Well the French army and the Mexican army went to battle. On May 5, 1862 at Puebla, the French forces met the Mexican forces and a battle occured where the French forces were forced to flee. The Mexican army had a small victory, even though the French would end up winning the war.
According to some historians, the French were allies of the South during the Civil War, which was going on at the time of the Battle of Puebla. If the French had won the battle, they would have offered aid and supplies to the ailing southern army, and think of how history would be if that happened!
The day is celebrated in Puebla as a remembrance for the Battle and in the United States, Cinco de Mayo is kind of like a Mexican Pride day. Where the people celebrate the Mexican culture and what they have brought to the United States. Like St. Patrickโs day in America, Cinco de Mayo has a lot of drinking involved.
We actually have a holiday in Belgium on the fifth of May.
