There’s quite a bit going on with these waffles. The batter has sour cream that’s balanced with the addition of dark chocolate chips. Then I topped them with half a caramelized banana a big sprinkle of coarse sea salt. So, to recap, we’ve got: sour, sweet, creamy, salty, and then some delicious flavors like chocolate, banana, and maple syrup.
It’s a lot. But I promise, it’s not too much. 🙂
Sour Cream Waffles with Caramelized Bananas, makes four.
3/4 cup flour
1/4 cup arrowroot (or cornstarch)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2/3 cup sour cream
1/3 cup milk
1/3 cup oil (I like olive oil but canola or vegetable is good here too.)
1 egg
1 teaspoon vanilla
1/4 cup chopped dark chocolate chips
For the caramelized bananas:
2 tablespoons butter
2 tablespoons brown sugar
2 ripe bananas
In a medium to large mixing bowl, whisk together the flour, arrowroot, baking powder, baking soda, and salt to blend and remove any clumps. Then stir in the sour cream, milk, oil, egg, and vanilla extract until just combined. Then stir in the chopped chocolate.
Heat up your waffle iron and cook waffles according to the manufacturer’s directions.
For the caramelized bananas, first remove the peels and cut each banana lengthwise (long way). Then cut in half. You should have eight pieces from the two bananas. In a medium size saucepan, heat the butter over medium/high heat. As soon as it’s melted, sprinkle the brown sugar over the butter and add the banana slices over this. Continue to cook for 2-3 minutes, moving the bananas a little bit with a spatula, or giving the pan a quick shake every now and again just to make sure they are not sticking to the bottom. Flip them after a minute or two so each side gets coated in the caramel.
Serve two banana pieces over the top of each waffle and sprinkle with a little coarse grain sea salt just before serving. Happy breakfasting! xo. Emma

This looks so good! Two questions. Do you think I could sub in some oat flour and still get good results? I am also curious about the purpose of the arrow root/corn starch. I have never seen that in a waffle recipe before.
Hmm. Not sure on the oat flour. I’m not very experienced with oat flour. If you try it let us know what you think.
The arrow root or cornstarch (depending which you use) will make the waffle more crispy/crunchy. I hesitate to say “crunchy” as it’s not really THAT crunchy, but it has a really good crisp to it. More than you might expect. I like this but if you like softer waffles then use all flour instead of the starchy stuff. 🙂

ha! I own two. Both are circles but this one has hearts in it. I think it used to belong to Elsie but I guess I got it in the move. I had a third one that makes bubble waffles, but it moved to the Nashville branch. 🙂
I must be crazy too because I sort of want to buy another one, a rectangle one. That’s the kind my grandmother had when I was growing up and I just feel like I need that waffle nostalgia in my life.
But I already have two, so I guess I’ll wait until one dies. (Or I’ll cave, we’ll see.)

When you get that rectangle waffle iron you should try your hand at bread and butter waffles. I think you could find a way to modernize it and make it a fun on the go breakfast.

Oh man. This looks delicious!! One of my all time favorite deserts is Banana’s Foster which isn’t alway easy to whip up or find at a restaurant. This reminds me of a breakfast version of that! Adding this to my list of things to try!

Maybe a silly question – but what is the purpose of baking with sour cream? Is it specifically for taste or texture, or is there a healthy aspect of it where this replaces other, less healthy ingredients? I have done some baking with sour cream and it’s always turned out well, I’ve just often wondered at what the intentions are.
Caramelized bananas are so under rated. They taste amazing and they are so easy to make! I love the flavor and texture sour cream adds to foods – so delicious!

Where did you get your waffle maker? Can you get it at Walmart or Target or did you have to order it online?
It adds a little flavor but is also one of the fats in this recipe. To me, it’s similar to baking with buttermilk. It kind of adds a, well, sour flavor which can balance well with sweeter baked goods. You could also use greek yogurt for a very similar effect.
