If you've never had a whoopie pie before than you might not know that it's a delicious homemade cookie sandwich. These have two soft, spicy cookies on the outside and a creamy frosting filling. They taste vaguely like spiced apple cider and are a wonderful afternoon coffee-break treat for the autumn season!
Spiced Cider Whoopie Pies, makes 12-15.
Needed: 1/2 cup softened butter, 1 cup brown sugar, 1 egg, 1/3 cup sour cream, 1/2 teaspoon vanilla extract, 2 cups flour, 3/4 teaspoon baking powder, 3/4 teaspoon baking soda, 3/4 teaspoon salt, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, a pinch of cloves and 1 apple (Granny Smith or other tart variety) peeled cored and cut into small pieces.
Cream together the butter and sugar, add the egg, sour cream and vanilla and mix until just combined. In another bowl combine all the dry ingredients, whisk together. Combine the wet and dry ingredients until there are nearly no lumps left. Then stir in the apple pieces.
Place spoonfuls of batter on a greased (or parchment paper lined) baking sheet and bake at 375 F for 8-10 minutes.
For the filling combine 1 package (8 ounces) cream cheese, 2 tablespoon melted butter, a pinch of cinnamon and 1 cup to 1 1/2 cup powder sugar until you get the frosting consistency you prefer. Pipe filling on to one cookie, the top with another (pictured above).
Enjoy these!!! xo. Emma and Elsie

mmmm, this looks so amazing! I could defiantly go for one of those right now!
I still have not tried a whoopie pie! How is it possible? I like that this one has a cream cheese filling (yum!) and sour cream in the cake/cookie part. Sour cream always seems to make everything nice and moist. Oh, and I love spiced cider, so this sounds like a winner!
I love whoopie pies in general and these look amazing!

What a lovely idea for a whoopie pie flavor. I just made the classic pumpkin ones a few weeks ago, and I was thinking sweet potato whoopies with marshmallow filling would be fun for Thanksgiving. I adore whoopie pies!
This looks unbelievable…but how many calories per serving????
Peace
Mike

i made peanut butter whoopies on friday….can’t wait to try these!!!!
I made them and the ‘pies’ are so delicious, but I could get the filling rigid even aften adding double up on powder sugar! I used sour cream with 8% fat.. I even tried to cool the filling in the fridge, but it was still to fluid.
Do you have any advises for me?
Edit: I could NOT get the filling rigid 🙂
these look utterly delicious. I’ve just made Oreo Whoopie pies! Rich, sweet and seriously tasty
