Ah, soup. I don’t know about you but I never appreciated soup as a kid. I think it takes some maturity to recognize just how wonderful a good soup can be. Soup can be so delicious, comforting, colorful, flavorful and it can do all this while still being healthy too. (!!!!!!!) This soup manages to be very creamy while still being vegan-friendly. It’s sure to warm you up with the added spicy kick from a few chipotle peppers. And I’m pretty sure sweet potatoes are, like, really good for you. A super food or something. My point is: Eat this. Do it.
Spicy Chipotle Sweet Potato Soup, makes 2 servings
Needed: 1-2 tablespoons oil, 1/2 yellow onion, 2-3 cloves (or nubs, as I like to call them) minced garlic, 1 large sweet potato (or 2 if yours are on the small side), 1-2 chipotle peppers in adobo sauce,14 ounces (one can) veggie or chicken stock, salt + pepper, and a few sprinkles of cilantro for garnish.
First, chop up the onion and potato and mince the garlic. In a medium size spot, heat oil over medium heat and sauté the onion and garlic for a couple of minutes. Add in the potato and chopped chipotle pepper. I used two peppers plus about two teaspoons adobo sauce. This made the final soup quite spicy. I thought it was just the right amount for me, but if you like a little less spice or have never cooked with chipotle peppers before try just one pepper.
Add the stock and turn the heat down to medium/low. Let this cook (softening the potatoes) for 20 minutes or so. I had very thinly sliced my potatoes but if you left yours more chunky you may need to cook them a little longer. Season with salt and pepper. Blend into a soup. Serve hot with cilantro and a maybe a slice of fancy toast. If you have fancy toast at your house.
There are a few ways to blend soup. You can transfer the contents to a blender or food processor and puree. This can be done in batches if you are making a larger quantity. I’ve done this and it works fine but be very careful when pureeing hot liquids. I currently use (and LOVE) my immersion blender. If you’re planning to make soups a part of your weekly or even monthly routine I highly recommend treating yourself to an immersion blender. Plus they come in so many pretty colors! 🙂 xo. Emma

Yum! I’m gonna make this for dinner tonight. thank you for the recipe!
When my grandma passed away, I inherited her jewelry and her kitchen stuff – and I’m not sure which I was more honored to receive. Her immersion blender (and potato ricer!!) is one of my most used kitchen tools, and I think about her every time I bust it out. I wish she was still around to taste some of the things I’ve made with it. I think she would be pretty proud. 🙂
Oh Emma, you’ve outdone yourself. This sounds like a perfect combination!

Perfect, perfect! Soup is my absolute FAVOURITE meal, I make it almost every day, problem is, pumpkins currently cost a fortune here in Australia, so I’ve been making a very delicious (probably more delicious than pumpkin) sweet potato and carrot soup. Now I have another variation to try, I looove me some heat in my soup. xo
I agree with you as a little dot, I found soup a little blah! Now I adore soup, crusty bread…Mmmm!
This looks delish!

Looks delicious and comforting..perfect for a chilly night!
I love sweet potato soup and I love the idea of adding chipotle. The smokey spice would be perfect. It’d be good with pumpkin too. Sometimes I do a Thai style with coconut milk, chili and coriander.
Thank you for this post! Perfect: I have everything at home, so I will definitely make this soup for dinner today!!
xoxo

This looks delicious, but am I overlooking what you do with the cloves? Not a huge fan of cloves, so I would probably just leave them out, but others might like to know. 😉

I’ve been a soup lover forever and eat it pretty regularly, always have. This looks delicious!!! Mmm!!!!!!

This recipe is a keeper! I made this last night and it was very good! Pretty spicy but its fall now and heat from the soup was nice, thanks 🙂
I made this yesterday as part of a huge soup stock up and had it for lunch today. It is absolutely delightful and spicy.
Perfect for fighting my current head cold too! I doubled the recipe and split it into mason jars for individual portions. While heating my jar up today, you also inspired a future blog post for my blog: an adjustable mason jar cozy!
Thanks for helping me stay inspired and for your always wonderful content.
This looks amazing! Love soup and bread season. -jb.
