Spicy Chipotle Sweet Potato Soup

Sweet potato soupAh, soup. I don’t know about you but I never appreciated soup as a kid. I think it takes some maturity to recognize just how wonderful a good soup can be. Soup can be so delicious, comforting, colorful, flavorful and it can do all this while still being healthy too. (!!!!!!!) This soup manages to be very creamy while still being vegan-friendly. It’s sure to warm you up with the added spicy kick from a few chipotle peppers. And I’m pretty sure sweet potatoes are, like, really good for you. A super food or something. My point is: Eat this. Do it.

Easy homemade soupSpicy Chipotle Sweet Potato Soup, makes 2 servings

Needed: 1-2 tablespoons oil, 1/2 yellow onion, 2-3 cloves (or nubs, as I like to call them) minced garlic, 1 large sweet potato (or 2 if yours are on the small side), 1-2 chipotle peppers in adobo sauce,14 ounces (one can) veggie or chicken stock, salt + pepper, and a few sprinkles of cilantro for garnish.

First, chop up the onion and potato and mince the garlic. In a medium size spot, heat oil over medium heat and sauté the onion and garlic for a couple of minutes. Add in the potato and chopped chipotle pepper. I used two peppers plus about two teaspoons adobo sauce. This made the final soup quite spicy. I thought it was just the right amount for me, but if you like a little less spice or have never cooked with chipotle peppers before try just one pepper.

Add the stock and turn the heat down to medium/low. Let this cook (softening the potatoes) for 20 minutes or so. I had very thinly sliced my potatoes but if you left yours more chunky you may need to cook them a little longer. Season with salt and pepper. Blend into a soup. Serve hot with cilantro and a maybe a slice of fancy toast. If you have fancy toast at your house.

Chipotle sweet potato soupThere are a few ways to blend soup. You can transfer the contents to a blender or food processor and puree. This can be done in batches if you are making a larger quantity. I’ve done this and it works fine but be very careful when pureeing hot liquids. I currently use (and LOVE) my immersion blender. If you’re planning to make soups a part of your weekly or even monthly routine I highly recommend treating yourself to an immersion blender. Plus they come in so many pretty colors! 🙂 xo. Emma
