I made this for lunch earlier this week and today (being cloudy and chilly where I live) I'm wishing I had another bowl. This is not an overly spicy soup. It also boasts sweet pineapple and a little honey. But it is one of those dishes that can make your nose run a little—a really great soup if you are hungry and maybe starting to get a cold.
Was that gross? Should I have left that part out? Hmmm…Spicy Pineapple and Shrimp Soup, makes 4 servings
6 oz frozen peas, thawed
1 red bell pepper
1/2 pound shrimp, shelled
15 oz pineapple chunks (fresh or canned)
1/2 cup pineapple juice
1 1/2 cups vegetable stock
2 teaspoons corn starch
2 teaspoons honey
2 teaspoons soy sauce
1/2 teaspoon Sriracha
1/2 teaspoon ground ginger
1/4 teaspoon red pepper
2 teaspoons rice vinegar
rice for serving
I made this in a crock pot, but you could also easily make this on the stove. Whisk together the pineapple juice, stock, corn starch, honey, soy sauce, Sriracha, ginger and red pepper. Heat over low heat until warmed through then add in the pineapple, chopped bell pepper, peas and shrimp. Cook until everything is done and warmed through. Stir in the vinegar just a few minutes before serving. Serve over a small bed of rice. Enjoy! xo. Emma

Just so you know, I do not know what the big shrimps are called in english (scampi), anyways; they are extremely bad to the environment, they ruin the whole eco system and kill the mangrove forests (that are very rare). Check it up and read more about it! You know, scampis are grown not naturally so they grow them in the mangrove forests, so please stop eating and using scampi! I did not know about how bad it was, but when I was informed I stopped imediately and told all my friends. I do not force them to stop eating:) But please spread the word!
Made it but added chicken instead (I’m not much if a seafood lover) and it was delicious! Loved the pineapple and the spice!
I love a good soup on a cold day, and anything with Sriracha makes me swoon!

Lindsay- I put mine on “low” for 5 hours. But I really don’t think it needed all that time, so if you are not using a crock pot don’t feel you have to leave it on for so long. I’m still beginning to experiment with my crock pot (just got one for Christmas!) so I’m trying to note when it’s important and when it is simply an option in recipes. 🙂 Good luck!

Alright. So here’s the deal, made this for dinner tonight ( I’ve been meaning to make this scrumptious looking bad boy since you first posted it) I tweaked it a bit ( I cook like a sitcom as I’ve been told: I get easily distracted) doubled the recipe due to me mistakingly adding the whole bag of peas ; put some top roman noodles in (pantry cleaning), added a variety of peppers, and kicked up the spice a notch (red rooster sauce is my cold medicine).
This recipe was fantastic, the base of this soup is versatile and could easily be molded into a whole array of different soups.
I just wanted to say thank you for the great recipe; I had no critiques for improvement(in my opinion feedback is always wonderful when putting out recipes or projects).
