I am on a mission. That mission is to find ways to use my brûlée torch in many different meals. I think it can be so much more than a dessert tool. My brûlée torch is destined for great things—I’ve just got to facilitate the opportunities. First up, let’s tackle breakfast.
If you’re not already a fan of steel cut oats, then this recipe might just convert you. We’ll be adding a secret ingredient that makes the oats SO creamy and then the brûléed top just hits it out of the park for me. It’s dessert breakfast. Which is totally a thing, I swear!
Steel Cut Brûlée Oats, serves 2-3.
1/2 cup steel cut oats
1 cup whole milk
1 cup water
2 oz. cream cheese (the secret ingredient!)
2 tablespoons brown sugar, honey, or maple syrup
3-4 tablespoons granulated sugar (for the tops)
This recipe takes about 25-30 minutes from start to finish. If you feel that’s too long to fit into your morning routine, I hear you! One awesome thing about steel cut oats is you can easily make a double batch and refrigerate to use throughout the week (just rewarm in the oven or microwave). It holds up and doesn’t go to mush like traditional oatmeal sometimes does when saved for too long.
In a small/medium size pot, bring the milk and water to a boil. Add the oats and stir for one minute. Then turn the heat down to a simmer and allow to cook for 20-25 minutes. I’ll give it a stir every few minutes to avoid any oats getting stuck to the bottom of the pan, but you don’t have to baby it quite as much as, say, risotto.
During the last 2-3 minutes of cooking (when it looks like most of the moisture has absorbed into the oats), add the cream cheese and your sweetener of choice. Taste and add more sweetener if you like.
Place in a small bowl and use a spoon to get the surface as even as possible. Then top with granulated sugar (or super fine/baker’s sugar works well too if you have some on hand). Torch until the top begins to caramelize. Serve warm with fresh fruit. Yay for dessert breakfast! xo. Emma

This looks amazing! I haven’t been feeling oats lately but this is enough to make me want to have some! So pretty as well.
This is such a great idea! Love the little raspberries! Such a nice pop of color! 🙂
And they’re delicious…!

This just looks too good to pass up even if it takes a little more time! Can’t wait to spice up breakfast C:
Keep the torch recipes coming! I love busting mine out too. Another idea for you: put some fruit or preserves into the bottom of a ramekin, top with greek yogurt, and then sprinkle the top with sugar and brulee!
I love all your recipes. My husband is allergic to lactose. Do you have any suggestions on substitutes that would still make this dish tasty/creamy?
Haha great torch mission Emma! Always good to make fun goals for yourself 🙂

Hi Emma,
This looks delicious! I want to try it, but first I need a torch – ha!
Love your mission, (since I love creme brûlée) and have an idea to pass on to you: my favorite sushi place makes the best Tamago (you know, the sweet, yellow egg omelette sushi?) I have ever tasted. They brûlée the top of each one, so it is just slightly charred. I think they must put a little sugar on it first. Anyway, it is the best and much prettier than regular Tamago. So, there is an idea for you!

Yum, looks delicious, and so healthy too!
Who would have thought to add cream cheese? I usually add evaporated or condensed milk….but cream cheese is a whole lot less calorific! Am going to give it a try (I’m a porridge for breakfast every day kind of girl)…love the idea of a brûlée porridge! Great stuff!
You’ve hit it out of the park with this one. Amazing. The cream cheese AND the brulee twist?? Seriously. I was NOT READY for this!

Wow that looks incredible! Often when I make steel-cut oats I’ll brown them in a little butter before adding any liquid — it adds so much to the flavor! Can’t wait to give this recipe a try. 🙂
Always, Anita
Cream cheese in oats? Sounds delicious and looks so, so creamy! Cheesecake oats?
Your brûlée mission has proven to be a success so far! Next up, something savoury perhaps?

That sounds and looks really awesome! Maybe I can try this out next week when a group of friends will visit me for lunch.
Have a nice week you two! 🙂

This looks so good! I love a good creme brule and I love porridge, but I’ve never actually tried steel cut oats before. They kind of freak me out a little haha! I think I definitely have to give them a try now though.

Oh my how yummy!!
This is super cool! I never thought of using the brulee torch this way, but my oatmeal mornings may have just changed dramatically. Or maybe I’ll eat this as dessert…
Need this in my life!
I like the way you think!
Love my torch-makes me feel so dangerous in the kitchen. 🙂

Does he eat soy? If so I know there is a soy “cream cheese” I see and have used at the grocery store before. I can’t remember the brand off hand but it’s a similar creamy consistency but no dairy. I would try that along with soy milk or almond milk.
Good luck!

I’m not a massive sushi fan but that sounds WAY interesting to me-fun! Thanks for sharing.

Are you going to share any recipes from Elsie’s Whole 30? I would love to see what kind of meals kept her going 🙂
I’m a fan of condensed milk too but sometimes I think it turns out too sweet (can’t believe I’m saying that). So I like that cream cheese adds tons of, well, creaminess but it doesn’t add too much sweetness. You can control how sweet it is more easily, which is good when it comes to breakfast. 🙂

You had me at “brulee”, lol. Thank you for thinking of this for me 😉 I am SO getting out my torch for breakfast tomorrow! More things should be ‘bruleed’, if you ask me. Another tasty yet healthy one: fruit preserves, plain greek yogurt, top with sugar and torch. (I put the yogurt/fruit in the freezer for a few min to make it extra cold before torching.) Very yum as well.

Wow, these look fantastic. I love oats and I love creme brulee, so these are sure to go down a treat!
These sound divine! They might be too rich for breakfast, but they sound divine!
It’s the first time I saw a porridge brulée ! So chic! Bravo Emma 🙂
Hi Cyntia,

I’m definitely late to the steel cut oats party (before this post I didn’t even know that was a thing; horrible, I know 😉 ) I have to buy some now! Thanks for sharing this recipe 🙂
Do you think coconut milk would work? Or cashew milk?
YUM! this is such a great idea!

What a great breakfast idea!
Yum! This looks absolutely delicious! Emma, have you tried it with regular old-fashioned oats (not instant)? If so, does it hold up? Regardless, looks great!
This is definitely comfort food for me, thank you for coming up with such a simple and heartwarming dessert!
