I am no stranger to the margarita. I actually used to work at a Mexican restaurant for two years after college and I definitely had my share of off-duty margaritas (and chips and queso!!) at the bar after work, so even just the smell of tequila brings back memories of that job. While the classic margarita is pretty tasty, my husband Todd will always ask if a place has a strawberry margarita before making a drink decision and so I thought it would be fun to make a mini strawberry margarita jello shot just in time for summer patio weather.
Strawberry Margarita Jello Shot, Makes 16 Mini Margaritas
3-ounce box of strawberry jello
1 cup of water
1/2 cup tequila
1/4 cup lime juice
1/4 cup orange liqueur
For serving:
mini margarita glasses
mini spoons
limes for garnish
salt/sugar and honey for rim
Pour your strawberry jello powder into a bowl. Boil one cup of water and mix that with your jello powder, stirring until dissolved. Add in your tequila, lime juice, and orange liqueur and stir to combine. Pour your mixture into a container with a pourable spout and transfer to your mini glasses, filling until close to the top (the liquid will shrink some as it solidifies). Place in the refrigerator to set overnight and prepare salt/sugar rim right before serving. To create your rim, pour some sugar or salt onto a small plate and drizzle some honey or agave syrup on another plate and dip the rim of each glass into the honey and then into the sugar or salt. Garnish with a lime and you’re ready to serve! Oh man, don’t those look soooo good? You can do this with other flavors of jello as well to make a variation of margaritas (lime or pineapple would be great) and I would serve these with something like this so that your guests can scoop the jello right out of the cup. These would be perfect for a fiesta-themed party or just for a summer gathering as well (don’t forget the chips and guac though). Enjoy! xo. Laura
