Summer Night Cocktail

Summer Nights Cocktail (SO good as a cocktail or a mocktail!) www.abeautifulmess.com  This cocktail is inspired by a recent trip I took to Palm Springs. I found this drink at the Ace Hotel called The Desert Facial. It was super refreshing, the perfect poolside drink! So I started making a version of it at home. It's my favorite summer drink!

One of the best things about this drink is that it tastes just as amazing as a mocktail! If you're hosting a party with a mix of people who do and don't drink, just make a pitcher of this but leave the Rum on the side for people to add if they like!

1/2 cup pineapple juice
1/2 cup fresh cucumber juice
10 fresh mint leaves
1.5 ounces white rum

Combine all ingredients and stir to combine. Pour over ice and serve! This is a great cocktail to make ahead. You can easily quadruple the recipe and store in a small pitcher until you are ready to serve guests later that day.

P.S. We've gotten a few questions about how to make cucumber juice. There are two main options. First, if you own a juicer then, of course, you can simply juice raw cucumbers. If you don't own a juicer you can still make fresh juice—here's how. First cube your vegetable or fruit into bite size pieces (discarding any peels, or rinds). Place in a blender or food processor and puree. Pour the mixture into a fine mesh sieve and use a spoon to press the pulp into the mesh, releasing as much juice as you can. I usually have a large bowl set under my sieve, so I don't miss any of the juice.
