This cocktail is inspired by a recent trip I took to Palm Springs. I found this drink at the Ace Hotel called The Desert Facial. It was super refreshing, the perfect poolside drink! So I started making a version of it at home. It's my favorite summer drink!
One of the best things about this drink is that it tastes just as amazing as a mocktail! If you're hosting a party with a mix of people who do and don't drink, just make a pitcher of this but leave the Rum on the side for people to add if they like!
Summer Nights Cocktail, makes one.
Combine all ingredients and stir to combine. Pour over ice and serve! This is a great cocktail to make ahead. You can easily quadruple the recipe and store in a small pitcher until you are ready to serve guests later that day.
P.S. We've gotten a few questions about how to make cucumber juice. There are two main options. First, if you own a juicer then, of course, you can simply juice raw cucumbers. If you don't own a juicer you can still make fresh juice—here's how. First cube your vegetable or fruit into bite size pieces (discarding any peels, or rinds). Place in a blender or food processor and puree. Pour the mixture into a fine mesh sieve and use a spoon to press the pulp into the mesh, releasing as much juice as you can. I usually have a large bowl set under my sieve, so I don't miss any of the juice.

This sounds delicious. I think I would also be great to make it with out the rum and add a bit of sparkling water for a kids party. The basic drink itself just sounds delicious.
