This is one of those recipes that I feel proud to pass around the office or bring to a family get together. I'm not saying that it's the ultimate, most perfect, absolutely divine, everybody-always-loves-it-as-much-as-me, final say in hummus recipes. That would just be silly. But I will say that this hummus is my favorite. It sort of tastes like pizza.Oh no! I ruined it for you didn't I? Well listen up pizza haters: Try this. Even if you don't like pizza (weirdos!). Even if you don't like hummus (double weirdos!!). It's super easy to throw together, is pretty healthy for you, and tastes wonderful. Unless you're a weirdo, which I feel like I've already covered. Sun-Dried Tomato Cilantro Hummus, makes about 3 cups
1 can chickpeas
1/3 cup sun-dried tomato spread (found mine in the produce section)
2 tablespoon tahini paste
1/4 cup fresh cilantro
1 teaspoon salt + more to taste
1/3 cup olive oil
pepper and red pepper to taste First you need to rinse and remove the skins from the chickpeas. Most canned chickpeas still have the skins on them. There may be a brand out there that doesn't. But better safe than sorry. If you've never removed the skins you can see me doing this here.
Now place the first five ingredients in your food processor and blend until combined. Now slowly drizzle in the olive oil as the food processor is on low. If your processor doesn't allow for this then try adding the oil in three steps, blending in between. Try it and add pepper, salt and red pepper to taste. If you have a lemon, squeeze it over just before serving.I like to serve hummus with cucumbers and crackers. Other great options include: carrot sticks, celery, pita, tiny toast (totally a thing) or beef jerky (jk, weird).Enjoy this guys! After all, it's almost pizza hummus. π xo. Emma

Why remove the skins from the chickpeas? I always use them as is and my hummus comes out pretty good, I think. Is there something bad about the skins?

PS who doesn’t like pizza?
thank you for this! consider it made and devoured. my husband is going to love this.
Beverly-It just helps the hummus blend better. It will become more creamy than it would if you leave the skins on. There’s nothing wrong with leaving the skins on, they are perfectly edible. This is just how I prefer to make hummus. π
noms!
looks delicious never thought of cucumbers for dipping π
This looks awesome! I love hummus and trying new ways to spice it up! I will be trying this recipe soon π

I made this with basil instead of cilantro because I just love basil. I also added some garlic. We had it with salad and it was amazing.
Oh, I also didn’t have sun-dried tomato spread, so I just soaked some sun-dried tomatoes in hot water and used them like that.

Sounds good. π I’m going to try it.
P.S. You have a typo. It should be “tastes like pizza” not “taste like pizza.
P.S.S. You have other grammatical errors as well. I think you need Strunk & White. I tell you this because I believe your writing has potential.
