Sweet Heat Grilled Cheese Sandwiches

Sweet heat grilled cheese (via abeautifulmess.com) Let me step back just for a second. Are you familiar with sweet heat pizza? It’s my and Trey’s absolute favorite topping combo and has been for years: pineapple and jalapeño. I won’t lie, I also like the name. 🙂

Well, this is the grilled cheese version. And I figure if we’re grilling things already, then let’s go ahead and grill the pineapple too!

Sweet heat grilled cheese (via abeautifulmess.com)We don’t make grilled cheese sandwiches often at home, but when we do, I figure we might as well go all out! There are SO many ways to dress up this childhood classic. And if you want to see a LOT in one place, I highly recommend the Grilled Cheese Social.

You likely don’t need a formal “recipe” for this, but I may have one ingredient/trick that can’t be guessed from the photos…

Pineapple grilled cheeseHere’s what you need:

good bread
fresh pineapple (canned slices are OK too in a pinch)
a jar of jalapeños, including the juice
Manchego cheese (this goes great with pineapple in my opinion!)
a few tablespoons of mayo—that’s the secret

You’ll also need a grill pan if you want to get those pretty grill marks and add a little charred flavor to your pineapple slices.

Grilled pineapple!For the outside of the bread, combine the mayo with a tablespoon or two of the jalapeño juice. Then spread that all over before pan frying (or pan grilling) the sandwich. I like to use mayo instead of the usual butter because it just makes your grilled cheese all the more decadent. 🙂
