Sweet & Salmon

Sweet and salmonAs you may know, I am a recent Miso convert. It's just a really fun flavor that isn't overpowering in a dish. I love how it's savory but can easily be paired with a sweet component. For example, this baked salmon recipe features miso and honeyโ€”yum! Miso and honey glazed salmonYou could serve this along with a light salad (like I did) or a big helping of risotto or mashed potatoes if you'd like something even more filling. This is one of those recipes that will probably start making its way into our homemade dinner rotations. It features two things I love: it's delicious and super easy to make!How to bake salmonSweet & Salmon, serves 3-4.

13-15 oz salmon (if using frozen be sure to thaw first)
2 tablespoons miso paste (I used shiro)
1/2 tablespoon sesame oil
1 tablespoon honey
1/2 tablespoon rice vinegar
1/2 tablespoon soy sauce
juice from half a lime
1 clove of garlic, minced
1 teaspoon minced ginger
1 tablespoon chopped green onions

Stir together the miso paste, oil, honey, vinegar, soy sauce, and lime juice. Add in the minced garlic and ginger. Miso and honey glaze for salmonCover a baking sheet with parchment paper. Add 1/2 tablespoon of olive oil and spread over the parchment paper. Place the salmon on the oiled parchment paper. Pour over the miso glaze. Sprinkle with a bit of salt and pepper. Let that sit and marinate for 10-12 minutes.

Bake at 400ยฐF for 8-10 minutes (until the salmon is cooked through). Sprinkle the green onions over the top of the salmon just before serving.Miso and honey glazed salmon I especially love this glaze over salmon, but it could work well over other fish too, like tilapia or cod.
