This past weekend we visited a bunch of new-to-us Nashville restraunts, one of our favorites being Marché. Our friend, Annie, picked out this ricotta toast with peaches and we were all obsessed! It's so simple, but SO delicious. I re-created my own version at home with raspberries too! It's the perfect sweet, but not too sweet snack!I used toasted sourdough bread, whole milk ricotta cheese, fresh peaches, fresh raspberries and a drizzle of honey on each slice. I love ricotta on toast! Fruit is yummy, I also like to cook cherry tomatoes in a little balsamic for a savory version (with an egg on the side!).
Do you have crumpets in the US? Try crumpets, mascarpone, rhubarb and maple syrup…..delicious!!
Oh man, yum!! Looks like it would be great with goat cheese as well (I’m obsessed with goat cheese– I look for any chance to throw some into a recipe, heheh)!

I’ve had this at a cafe before but with tinned apricots – they put half an apricot in the middle of each slice of toast with the ricotta around it, so it looked like an egg. Super cute and super delicious, thanks for reminding me of this!

Have to say, I’d never have thought about putting fruit on toast before, but then again I love marmalade/jam so what’s the difference?! Currently loving dried apricot, prunes, granola and Greek yoghurt too.
