Bucatini Carbonara (+ A Little Giveaway!) (CLOSED)

Bucatini Carbonara (click through for recipe)There’s a new restaurant that opened this past year in my hometown that I just love. It has super cute decor and serves a menu filled with locally-grown/raised menu items. One dish I keep seeing is pappardelle carbonara, which is the same dish as spaghetti carbonara, just different noodles. Every time someone orders this dish it looks just amazing. One of the main ingredients is jowl bacon though, and since I don’t usually eat pork I haven’t ordered it myself. But, I decided, why not make it at home?

This post was created in collaboration with Barilla and their new Collezione pasta with cuts and textures inspired by the regions in Italy. We used their scrumptious Collezione Bucatini pasta, inspired by the Lazio region in Italy, to create this vegetarian-friendly version. For those of you unfamiliar with bucatini pasta, it’s like a hollow spaghetti—similar to a straw—which gives it a thicker comfort-food feel, without being too heavy.

Bucatini Carbonara (click through for recipe) Another component of this dish you’ll notice is that little yellow egg yolk sitting on top. The sauce for this dish is usually made of egg yolks and cheese, but there are lots of different ways to prepare and present it. I personally love this presentation so you get to stir the yolk into your hot noodles just before eating, but you could also choose to do this ahead of time in case the sight of egg yolks just doesn’t excite you like it does me. I’ll give you a few more ideas on how you could customize this recipe to suit your particular tastes. Food is meant to be enjoyed, so customize away, my friends!

How to cook pastaBucatini Carbonara, serves 4.

12 ounces Barilla Collezione Bucatini pasta
6 slices of facon (could be swapped for mushrooms if you’re not crazy about fake meat)
5 cloves garlic
1 tablespoon butter
1 tablespoon olive oil
4 egg yolks
1 cup shredded Parmesan cheese
3 tablespoons fresh parsley
salt + pepper

Begin by cooking the facon (or bacon, if you must). Once cooked and crispy, chop it up into small pieces and set aside.

Cook the pasta according to the package directions. Just before draining, reserve about 1/2 cup of the pasta liquid. 

CarbonaraWhile the pasta cooks, mince the garlic and sauté in a pan with butter and olive oil. Toss in the pasta, cheese, and facon, and let everything get nice and hot and lightly coated in the butter and oil.

Divide the pasta into four servings and place on a plate. Add the egg yolk and drizzle a couple teaspoons hot pasta liquid over the yolk. Sprinkle on some salt, pepper, and parsley.

Bucatini Carbonara (click through for recipe) If you prefer, you can toss in the egg yolks while the pasta is still in the pan and let the yolks coat and cook a little before removing the pasta to plates. You could also choose to skip the yolks and just drizzle in 2-3 tablespoons cream along with the cheese to create a light and creamy quick sauce. Totally up to you.

I love the simplicity of this dish. It’s just such a comforting and easy-to-make meal. Yum! Make this for someone you love this week.

  • My favorite region in Italy is the area known as Cinque Terre (the five villages). I booked two days here as a stopover during a backpacking trip after college, and wish we would have stayed much longer! It’s beautiful, the food is delicious, and the people are warm and friendly.

  • My favorite Italian dish is Calzone,I’m not sure how to make it but I tried once in Old bistro at Downtown Minneapolis, MN. It’s actually originated from Naples,Italy.
    A typical calzone looks like a half moon consists of bread dough baked in oven stuffed with salami, ham, mozzarella, Parmesan or ricotta cheese, and amalgamated with egg. So far that is my favorite Italian dish. Thanks for sharing the recipe anyway.

    In fact one of my favorite Italian meals is Carbonara but the definite favorite has got to be lasagna because it always feels really special to me. I also very much love tiramisu and make a christmassy version of it for my family christmas dinner every year.

  • I once spent time in Cortona on the border of Umbria and Tuscany. The city was beautiful! One night, tucked into one of the fairy lit, cobbled side streets I had the most delicious mushroom stuffed gnocchi in a mushroom cream sauce. It was incredible!

  • I love basically all pasta, but one of my favorite italian dishes is chickpea noodle soup made with thick ribbons of pappardelle pasta from the Puglia region of Italy. It is so light and warming. It is typically made with chicken broth but I use veggie broth instead.

  • I could eat my mom’s creamy pesto chicken pasta for every meal every day if I could! She makes the pesto fresh from her garden and uses as many fresh local ingredients as she can! So delicious!

    Pieve di Cadore, which is the slightly larger town right by there, is the place where eyeglasses were invented! Thank god! There’s a small but interesting eyeglass museum in the town.

    Also, you cannot beat my grandmother’s risotto.

    My current favorite Italian dish is a vegetable sandwich my grandmother makes. Roasted squash, eggplant, mushrooms, onions all drizzled with olive oil, minced garlic and thyme. Mix balsamic vinegar with mayo and spread on some delicious crunchy bread. Add your veggies and top with a nice chunk of mozzerella. So yummy!

  • Hola, I went to Italy for my Honey Moon, so in Rome my hub and I visited Piazza Di Fiori, there was an incredible restaurant with a great menu. So we decide to try the white pizza, a crispy dough with a variety of cheese and meat on top. Was the perfect dinner!!! I was already a pizza lover, but that experience affirmed it.

    Now I try to make our own pizzas and try different ingredients. My daughter said “Pizza is the most complete food, grains, vegetables, dairy and proteins in a single slice”… Very True.

  • Florence, Italy is the best! Walking around the city is beautiful at dusk. The first time I went walking around, I stumbled upon an outdoor area that usually hosted concerts but instead had the traveling portion of the Russian Ballet. Amazing night!

In my opinion, italian food is one of the best in the world (and healthiest!) : pizza, focaccia, pasta, raviolis, lasagne, risotto, minestrone, bruchetta, their use of beans in soups and salads and stews, the use of season vegetables, their dishes that can easily made vegetarian, their delicious hams and cheeses, chickpea flatbreads, and of course tiramisu, ice cream and panna cotta, just everything is delicious!
    I’ve visited italy twice : Roma and the Cinque Terre, two very different places but both awesome! I hope to go back again and again!

  • I studied in Florence for one semester 24 years ago and fell I love with all of Italy! I have to say that I makeSpaghetti Carbonara every few weeks for my boys. Since it’s not so figure friendly, I always make some “zoodles” for myself to cut down on the carbs. Zucchini noodles taste great with the yummy bacony egg sauce!
    Also, when I lived inFlorence, all the local mom and pop trattorias had a pasta sauce made from artichoke hearts that my friends and I loved. I’ve never found a restaurant here in the US that serves this sauce and would love to track down a recipe 🙂

  • When I visited Italy a few years back all I wanted to eat was gelato and pizza. I tried to branch out but Italian pizza is too good to say no to!

  • I’m Italian and I like your new way to cook carbonara, but if you don’t mind I’d really like to share the way we usually prepare it here!
    First you whip the eggs (all the egg, not only the yolk) with the cheese, while you’re slightly frying the bacon with olive oil.
    Then you normally cook pasta. When pasta is cooked, you put it in a pot with the bacon, the “oil of the bacon” and the “sauce” you’ve made with the eggs and the cheese. You turn the stove on and you keep twisting it until the “egg sauce” becomes dots, I don’t know how to explain it haha. You have to obtain something like this http://www.alimentipedia.it/files/images/carbonara.jpg (see the yellow little dots? That’s the egg).
    Then you serve it with some pepper and you’re done! 🙂

  • We make a similar dish at home to the recipe above but we use pancetta. Skip the egg yolk and parsley but add chopped basil, sauté a mix of gorgeous cherry or grape tomatoes in garlic and olive oil, top pasta with pine nuts and lemon zest! So easy and SO yummy!

  • Had the best pasta of my life in Luca one day. Those beautiful walls brought us to a little osteria where I split three different pastas with my boyfriend since I couldn’t choose just one. But the best was a cacia e pepe pici pasta with roasted pears. Oh my god. I have never tried to recreate it as I don’t want to ruin the memory!

  • My family is from a region called Calabria in Italy and although it is a breathtaking place, I’d have to say my favorite would be Naples. The woman are tough and have attitude, the men are hilarious and give it to you straight and the children are miniatures of their parents and although it can be sketchy, dirty and hectic it is definitely what you would call a beautiful mess!

  • Oh gosh, I *LOVE* Italian food. All of Italy is beautiful, but my vote might have to be Tuscany, for the wines alone (though Emilia-Romagna is a close second for its food — Bolognese, the balsamic vinegar, ) And as for favorite foods, I’ve often said that a life without pasta is not worth living, and while most things done with pasta — especially fresh pasta — are the best, and sometimes the simplest dishes are the best, I must say, few things are as transcendent as a traditional Ragu alla Bolognese — some carrot, onion and celery cooked in pancetta, then meat cooked with a splash or wine to deglaze, slow until it breaks apart and forms its own sauce, then finished with tomato paste and a splash of cream. Served with a hearty Italian wine (and obviously so much parmesano-reggiano) and *muah* che buono!

  • I am a lover of all things bread, pasta, and cheese related. My mom always joked that I must have some Italian blood in me (though my parents are just French-Canadian and Irish). Any dish that mixes the three above, and I’m sold! Chicken Parm, fettuccine Alfredo, and my favorite: Parmesan garlic bread.

  • Hi! My favorite italian dish is eggplant parmigiana. I’m a vegetarian, and I don’t always have the kinds of options in restaurants that meat eaters do, but those delectable slices of eggplant layered with gooey cheese and tomato sauce are always lush and so delicious!

  • It’s cliche, but my favorite Italian dish would have to be lasagna! I grew up making lasagna with my grandmother, adding unconventional items like Dominican sausage, eggs, brie cheese, steak, etc. I love to make lasagna, especially if I’m feeding a large group. When it’s just for me and my husband, I make us individual servings in small bread loaf tins with ricotta, mozzarella, and parmigiano reggiano cheeses, homemade tomato sauce, hot Italian sausage, a mix of ground beef and ground turkey, onions and spicy seasonings. YUM, I just made myself want a serving, and will surely whip some up this weekend!

  • When I was growing up, I had a stepfather who was first generation Sicilian-American (he and my mother have since split.) In the summer months, we traveled to San Diego to visit his family. His sister made these little rice balls filled with meat and cheese and herbs, called arancinis (ah-rahn-gee-nees). They are to die for!

  • A few years ago, I visited San Gimignano, which is a tiny Tuscan village. It was stunning, surrounded by the beautiful countryside with cobblestone roads running throughout. It took maybe thirty minutes to walk the whole thing. While I was there, I had fresh pasta in a truffle walnut cream sauce. I typically go for tomato-based sauces, but this was and is to this day the very best pasta dish I have ever had (and, considering my mother’s side is Sicilian, this is really saying somethin’).

  • I was lucky enough to travel to Italy with my cousin last summer, courtesy of our Italian grandfather, who wanted us to see where he came from. My favorite area was Lake Maggiore. Gorgeous! I cook tons of Italian food, from all over the place, though my grandfather is from Naples. His meatballs are the best. (The trick? Raisins! Which some people think is gross, but the little bit of sweet is SO good.)

  • When I was in Palermo (Sicily) I had the most amazing spaghetti with squid ink pasta in my entire life! Being from Reggio (Calabria), i’m partial to the ‘Ratatouille-esque’ regional dish of Giambotta. It’s usually come once a year in the fall season because that’s when all the ingredients are ready to be harvested; onions, potatoes, zucchini, red bell peppers and spices are sautes until soft and tender and are basically eaten with bread. Soooo good!

  • My favorite place in Italy is Cinque Terre. It’s beautiful and it has so much good food. I’ve had the best gelato ever in city 4. I’ve head the best pesto in City 5. I’ve had, what is arguably my favorite thing I’ve ever eaten in City 2: there is a little bakery in the bottom of this building on your way down to the cliffs. It has this amazing bread with caramelized onions baked into it. Sooooo delicious.

  • I have not been all over Italy, only Venice, Rome and the cinque terre. I loved the cinque terre the most! I had some pesto gnocchi in that area and I was like the best food I’ve ever eaten.

  • On our ten-day trip through Italy boyfriend and I gained ****pounds (shocking!!) We ate in little local restaurants every night, eating pasta carbonara (how many different ways to make this! best one I ate in Rome) and pizza quattro fromaggi (another three pounds per pizza) and every night we tasted a tiramisu, just because we can! (best one in Firenze) My favorite dish? I don’t know!! At home I like to try different versions of pasta with pesto!

As for my favorite region: I visited Italy almost 15 years ago and I don’t think I can make a choice here. Florence, Rome, Vatican City, Pompeii, I loved it all.   • omg omg omg I LOVE Pasta. I could never jump on the carb free train because I love it so much! I love all sorts of pasta and Barilla is definitely my go to, I love comfort food like lasagna the best, but that’s a planned weekend dish that I need time for! This seems like a dish I could prepare during a week night and not interfere with the busy schedule! yum!

  • My favourite region is Piedmont – I love a good Moscato wine! Mmmmmh. And my favourite dish is definitely a good old caprese salad, with delicious italian mozzarella, fresh vine tomatoes and looooooads of basil.

Unless you have ethical reasons for avoiding pork, I would give the real stuff a try at least once – it’s not a huge serving of meat and really a wonderful treat.

We chose to move forward with Barilla knowing that they immediately distanced themselves from the comment, apologized profusely, and made changes to the company’s plans to directly contradict what the CEO said.   • I only got to stop for lunch in Italy when I was in Europe as a teenager; a little townbl named Vipitino, in northern Italy. I had the most amazing tortelloni in cream sauce there! Stuffed pastas are my fave.

  • That is a tough choice. I’ve never been to Italy but I love a really authentic Neopolitan-style pizza: wood-fired, thin bubbly crust, light/fresh but flavorful toppings.

  • I love spaghetti aglio e olio. I had never heard of it before my freshman year in college. I met my husband there and he’d lived in Germany in high school. Amazing food from all over Europe was just a train ride away for him (lucky bastard). He introduced me to this inexpensive dish when we were living in the dorms and totally broke so it was a big relief from the monotony of fast food and ramen. It’s just spaghetti tossed in olive oil, garlic, parsley, and lots of parmigiano-reggiano… I like to add onions and sub parsley for a dash of that Italian herb mix when I make it. I don’t make it often since my husband likes meaty sauces and my son likes mac and cheese, but when I do it’s a nice little reminder of how far we’ve come.

    And I’d like to point just two things: PLEASE, NO GARLIC for the carbonara (garlic is used mostly with fish or for simple pasta like “garlic, oil and red pepper”). And it’s better to scramble the yolks in a plate apart, together with pepper and cheese, and THEN put them over the cooked pasta – some people like it doing in a pan, when it’s still hot, so that the ingredients can melt better.

  • Now that my garden is flourishing, I love to make my own pasta dishes. Last night I used homegrown onions, gypsy peppers, serrano peppers and tomatoes (three kinds!) to make my own sauce, which would have been great with bucatini! We had spaghetti, however, and that was tasty as well. Finished with some fresh, homegrown basil, and topped with a little pecorino romano.

  • I went to Italy for the first time this summer and the Amalfi Coast was wonderful!

  • We went to Italy in 2012 and had so much amazing food. The best food we had was in Tuscany, delicious pasta with local meats and rich sauces. We even took a cooking class while we were there so we make Italian food all the time.

  • I traveled a bit through Italy last summer. I was lucky to spend a few days in Cinque Terre which was an incredible place to be — especially for the food. They are known for their pesto and it truly is incredible!!! I had a late dinner along the water with white wine and trofie al pesto. I don’t think any meal could top that one.

    Whilst holidaying in Tuscany I ate a diet of eggplant melanzane, ricotta, homemade gnocchi, fresh cherry tomatoes, mozzarella and lots of basil. I ordered Bucanti Napoli at a restaurant one night and couldn’t get enough – It would be a dream if I won some of this delicious pasta pasta.

The actions following the homophobic rhetoric was nothing more than trying to save their ass and customers from boycotting.

    Any PR person would tell you the tempers and outrage that were created from the Chairman’s homophobic comments have not cooled yet. No smart company goes near another company with such bad press without a lengthy cooling off period from the time of the indiscrection so the money they offered you must have been good.

    I’m sorry but I have really lost respect for this blog due to this poor choice of partnership.

    I don’t care that it seems like they are trying to make ammends and improve the culture of the company to be more LGBTQ friendly. At the end of the day they are trying to cover their ass. Still in the face of a PR nightmare of course they would list all of the wonderful improvements they are making.

    Sorry you were duped but honestly no large amount of money is worth your good name and hopefully this backlash will be a lesson you can take into the future. Don’t risk damaging your reputation with a company that has already damaged theirs.

  • Ravioli is my favorite! I always try to get to make it to a good Italian spot during restaurant week 🙂

  • My favorite Italian dish is Tiramisu… but I also love a good shrimp spaghetti!

  • the dish i grew up on was called “grape jelly spaghetti.” my mom found the recipe in the news paper and it involves pasta, tomato soup and grape jelly! sounds weird, but it’s oh-so good!

    not sure if that’s entirely italian, but it’s pasta!

  • I had a wonderful dish last Sunday evening. It was spinich pasta shaped like a lasagna noodle.There was a spinich noodle on the bottom layer, then a mix of crab, lobster,and shrimp covered with an alfredo sauce. Another layer of spinich noodle and alfredo sauce over all. YUMMY

  • There used to be this yummy little Italian restaurant named “Pizza World” (funny name, I know) near me that made the most amazing chicken thermidor! Sadly, they closed down a few years ago, and I’ve tried several times to make it at home but it’s never exactly the same, you know? I also love chicken marsala and chicken piccata – we’re a chicken household!

  • Calzones are my favorite! There’s a restaurant here called Joseph’s that makes the best ones ever.

  • My kids and their friends love my lasagna. I make it with Barilla’s no cook noodles and it saves me so much time!

  • I’d always thought that Paris, France and the region of Provence were my favorite places on earth until I visited Tuscany in 2003. I’m reminded of the movie “Jerry McGuire” and “you had me at hello” because that’s what happened. I fell in love with everything about it. From my first risotto on, I was in heaven. I’d been to Rome on another trip and liked it, but Toscono stole my heart and I don’t think I’ll ever be the same.

  • I have quite the soft spot for Tagliatelle! Even though I’ve never been to Italy, but it’s a country I’ve always wanted to visit

  • Longing to visit Italy! One favorite pasta is Penne with Spicy Vodka Tomato Sauce.

  • Love a good homemade marinara sauce over spagetti with lots of parmesan cheese.

  • My favorite Italian dish is pappa al pomodoro, which is basically a breads tomato soup from Tuscany. So good!
