yum.yum.yum. Today I made carrot cake muffins with cream cheese frosting and vanilla chocolate buttons. No occasion… just in the mood to make something sweet and cute and I want to continue my weekly cupcake feature, now that I'm settled in my new home! We made a dozen muffins and shared half with the Denbows.
Mix ingredients in a large bowl. *stir the mix as little as possible. stop as soon as the ingredients are blended together. Bake for 10-12 minutes at 350 degrees.
Here are the muffins before the icing…. so yummy. They don't really 'need' icing, but it sure is good.
Icing: to make the icing mix 4 ounces cream cheese, 5 tablespoons powdered sugar and 1 tsp. vanilla extract. Mix well.
I also used my BakeItPretty chocolate molds to make some vanilla buttons and other cute little animals to decorate the cakes with.
so much fun! how is your Tuesday? XO. elsie

And the buttons were such a surprise! I thought they’d be sugary like candy but liked them vanilla even better!

CUTE! My Tuesday has been okay. I had to attend a memorial service today for a super sweet man so that was sad, but planting some roses and hanging in my hammock was nice!
omg, i’m totally making these!! you are the cupcake queen!
Is there anything better than carrot cake and cream cheese frosting? That is cream cheese frosting, no? It is in my mind, anyway. ๐ Serious cupcake lust.
Hey Elsie, when do you open your cupcakes shop ?

This is the cutest cupcake ever! Awesome post!
Make sure you eat them muffins quickly because cooked pineapple goes off really quickly, and trust me, you don’t want to eat it when it does (it smells like sulphur i.e. eggs!)
Sorry for the ickiness, i love carrot cake!
I’ve picked up on a few things you’ve said and I’m just wondering, are you gluten free?
I had to start a g-free diet about 2 months ago and it’s been rough for me. If you know of any awesome recipes it would be great if you could share them. ๐
These muffins look sooo yummy!
I don’t get your point. But thank you all the same.
