Carrot Cake Muffins with Vanilla Buttons

yum.yum.yum. Today I made carrot cake muffins with cream cheese frosting and vanilla chocolate buttons. No occasion… just in the mood to make something sweet and cute and I want to continue my weekly cupcake feature, now that I'm settled in my new home! We made a dozen muffins and shared half with the Denbows. 

Carrot_cakeRECIPE: 2 Cups Pamela's Baking Mix (you can use flour instead, but Pamela's is the yummiest!), 2 Cups shredded fresh carrot, 1 apple shredded (peeled or cut into small cubes), 1 Cup sugar (or truvia), 3/4 Teaspoon baking soda, 1/2 Teaspoon salt, 2 Teaspoons cinnamon, 3 eggs, 1 Cup oil, 1 Teaspoon Vanilla extract. note: I've also used a small can of crushed pineapple, that's optional. 

Mix ingredients in a large bowl. *stir the mix as little as possible. stop as soon as the ingredients are blended together. Bake for 10-12 minutes at 350 degrees.

Here are the muffins before the icing…. so yummy. They don't really 'need' icing, but it sure is good.

Icing: to make the icing mix 4 ounces cream cheese, 5 tablespoons powdered sugar and 1 tsp. vanilla extract. Mix well.

I also used my BakeItPretty chocolate molds to make some vanilla buttons and other cute little animals to decorate the cakes with.
