Breakfast is for sure my favorite meal of the day! The only problem is, we don't make it at home enough. One of my mini-goals for this coming season is to cook breakfast and lunch at home. If I were to give this little goal of mine a name it would be be "beyond toast" or maybe "sometimes toast but not every time"? Basically I just need to DO it. So today I did do it. I was obsessed and feeling pretty high on breakfast happiness. Here's what I made:Before we get into tacos, I have to tell you that ginger in juice is one of the best things I've been making this year! I usually make ginger and green apple juice, but one day I tried ginger-orange, and it was incredible. All you need is three oranges per glass and a small piece of ginger (the size or your thumb for a mild flavor and double that for a super gingery, knock-your-socks-off type experience). If you have a juicer at home, just throw it all in and enjoy! If you don't have a juicer you can juice the oranges by hand and then shake them with small slices of ginger (martini style) to infuse the flavor. You're gonna love it!Breakfast tacos weren't always my jam. They can be greasy and gross, but when you make them at home they're a whole different animal. I fried two diced potatos with a little onion and garlic, made a batch or fresh pico, some guacamole, chorizo and some scrambled eggs with parmesan cheese. It's that easy!
Now all I wanna do is cook breakfast! What about you? xo. Elsie

These tacos look great! One of my favorite go-to breakfasts that is fast to make on weekdays and gives breakfasts a fancy touch are baked eggs. I stole this idea from a bistro in Paris. Put an egg into a buttered ramekin with whatever you want: tomatoes, onions, spinach, ham, etc. Bake in the toaster oven for 10 minutes at 350F for over easy eggs, more if you want. Eat with toast. It is so yummy!

Oh my F. Chorizo and eggs is pretty much the greatest breakfast known to man, in taco form, that’s just mind boggling good.
If you add Carrot to your Orange- Ginger juice it is phenomenal! I had a version of it when I visited Copenhagen last and I am still thinking bout it!
We literally just had this for breakfast yesterday! Awesome!
I’ve never really understood having tacos for breakfast, but that’s just because we don’t do it over here in England. But they look delicious for lunch instead.
And I love ginger, so the orange and ginger drink sounds delicious, I’m going to have to try that out very soon 🙂

Wow, looks amazing. I’m a huge fan of ginger so this is a must-try for me! Thanks!
This looks delicious! I’ve had potato and chorizo tacos before but never for breakfast and I’ll try anything for breakfast. It really is the best meal of the day! xxx

I have been making breakfast for dinner a lot lately and I can’t wait to add these to my rotation, I LOVE breakfast tacos. And that guac looks delicious!
Yum, this looks delicious! I eat breakfast at home 95% of the time, but normally it’s something quick. I love the days when I have extra time in the morning and can make something fun like waffles, or potatoes and eggs. Man, I sure love breakfast!

this would be a fun little morning get together too, or for the day after a party sleep-overs.
Wow why didn’t I ever think of that – a breakfast burrito with more than just eggs. I find when it’s just eggs the texture is too mushy. Those potatoes look yummy. Did you parboil them first before frying? And did you remove the skin and crumble up a chorizo sausage? Looks good!
Any breakfast that acts as an excuse for me to eat guacamole is a good breakfast in my book. These look delicious and are definitely going in my when-it’s-a-day-off book…or I’m going to have to prep some of this the night before so I can enjoy in the morning!
They really look like delicious mexican tacos and I’m mexican! 🙂
I use to do ginger -carrot, it´s also gorgeous

Its still a culture shock to me when people flip out over tacos for breakfast. Being Mexican and all, it doesn’t seem so weird, my parents used to make them every saturday and sunday mornings (after church) and we’d have either eggs and potatos, chorizo and eggs, Barbacoa and Queso Fresco (GO TO A MEXICAN MARKET AND GET IT). Its just so funny when I get that culture shock from myself and people everynow and then!
Tacos are actually poor person’s meal back in the olden times of Mexico. You could make a tortilla and chop up some beef and beans and there you go a full meal! They’re also a portable meal as well! Wrap it up in foil and put it in your lunch kit and there ya go!
Ooh these look so good! That ginger-orange juice sounds gorgeous too, I’ll have to give it a go!
looks delicious!
I love breakfast especially at home.

Loving this taco. And I bet it goes great with that juice! You are making me want to buy a juicer.
Love orange and ginger juice, throw a few carrots in your juicer with it, great beta carotene boost to start your day and adds a pleasant sweetness. PLUS it turns out neon orange which is just amazingly great.
Yes to the ginger in juice!! I was in Jamaica this summer, and ALLL of their juices had some ginger in it. Gave a really great punch, and I even think it helped with my digestion! haha.
Breakfast is my favorite meal of the day, too! I used to juice a lot a few months ago, but for some reason I let the habit go. I like your healthified version of tacos! The avocado is my favorite part 🙂 never enough avocado!!

I NEED TO MAKE THESE RIGHT NOW!
OMG, WHY I’M ON A DIET!?!?!??!?!?
I like the idea of that for dinner… not breakfast.
I prefer cereal! OH I LOVE CEREAL.

this looks amazing!! can’t wait to try it out!
As I like my sleep more than my breakfast, I rather choose sleeping 20 min more instead of making a great breakfast. But maybe I should give up this habbit. We have to keep in mind one thing – breakfast is the most important meal of the day.
I love ginger and try to eat it as much as I possibly can. I never thought about adding it to juice though! Great idea!!!

Any breakfast that includes avocado gets my vote! Orange and ginger juice is so great for getting a real hit if vitamin c and something cars when I’m feeling run down.

I agree, I would love to ‘spice up’ breakfast, and these look great to try!! Love the juice idea! Will give that a try for sure!!
