Chorizo and Potato Breakfast Tacos abeautifulmess.comBreakfast is for sure my favorite meal of the day! The only problem is, we don't make it at home enough. One of my mini-goals for this coming season is to cook breakfast and lunch at home. If I were to give this little goal of mine a name it would be be "beyond toast" or maybe "sometimes toast but not every time"? Basically I just need to DO it. So today I did do it. I was obsessed and feeling pretty high on breakfast happiness. Here's what I made:Ginger Orange Juice abeautifulmess.comGinger Orange Juice abeautifulmess.comGinger Orange Juice abeautifulmess.comBefore we get into tacos, I have to tell you that ginger in juice is one of the best things I've been making this year! I usually make ginger and green apple juice, but one day I tried ginger-orange, and it was incredible. All you need is three oranges per glass and a small piece of ginger (the size or your thumb for a mild flavor and double that for a super gingery, knock-your-socks-off type experience). If you have a juicer at home, just throw it all in and enjoy! If you don't have a juicer you can juice the oranges by hand and then shake them with small slices of ginger (martini style) to infuse the flavor. They can be greasy and gross, but when you make them at home they're a whole different animal. I fried two diced potatos with a little onion and garlic, made a batch or fresh pico, some guacamole, chorizo and some scrambled eggs with parmesan cheese. It's that easy!
