How to Make Nut and Coconut Butter

How to make nut and coconut butter (click through for recipe) I’m so excited to share today’s post because it’s SO DELICIOUS. I wish you could stick your hand through the computer and I could let you sample these three butters…. they’re so good. And I can’t believe how simple they were to make! 

We’re teaming up with Vitamix, a brand we ADORE. I wanted to share these coconut and nut butter recipes because they’re one of the many very useful (and $ saving) recipes you can make with your Vitamix. I was on the fence for years, wanting one but not ready to pull the trigger, and it’s recipes like this that really make it a game changer! When you get the right blender, it can take the place of so many appliances. They even just launched a partnership with PayPal to make buying easier. Anyway, let’s make some coconut and nut butter!

How to make nut and coconut butter (click through for recipe) Coconut Butter, makes 1 cup

Needed: 4 cups shredded or flaked unsweetened coconut

How to make nut and coconut butter (click through for recipe) How to make nut and coconut butter (click through for recipe) Add the coconut to the blender (I’m using the Vitamix 5200 Standard in white). Start on a low setting and move up to a medium setting the blender can handle. After a few minutes, the coconut flakes should turn into a grainy pulp, but keep going (scraping the sides down as needed) until it turns into a smooth-looking consistency (there will still be small grains in the butter, but pretty smooth overall). Pour the butter into a jar for storage.

You don’t need to refrigerate it, but you can if you want it to be a harder consistency. If it’s too hard to spread, you can microwave it for a few seconds to warm it up.

3 cups roasted salted peanuts

Blend until the peanuts are smooth, adding more oil if needed, and then add in the sugar and cocoa powder and blend until combined.

Add to a storage jar and refrigerate if you think it will take you more than a month or two to finish it (otherwise you don’t really need to).

3 cups macadamia nuts
1/4 cup sugar
1 tsp cinnamon
splash of oil

How to make nut and coconut butter (click through for recipe) Add the nuts and oil to the blender and start to blend on low speed. Gradually increase the speed as high as your blender can handle while still mixing all the ingredients together. Blend until the macadamia nuts are smooth, and then add in the sugar and cinnamon and blend until combined.

Add to a storage jar and refrigerate if you think it will take you more than a month or two to finish it (otherwise you don’t really need to).

I personally like the slightly grainy texture of the sugar. And remember, you do not have to sweeten these butters if you are avoiding sugar altogether.

Nut and Coconut Butter

Ingredients

Coconut Butter

  • Wow, Elsie! My kids eat pb&j like its the apocalypse and there’s nothing else left! They are gonna freak over these, except… can we use my food processor for these? I don’t have a Vitamix.

  • You can, but it might not be as smooth. I haven’t tried, though. The thing I like about the Vitamix is that handle thing that you can use to press the food down while it’s mixing- it helps it to not get stuck and to mix evenly.

  • How do you scoop everything out of the bottom of the Vitamix? I have a Vitamix but I hate how stuff is so hard to get out of the bottom, when I use a rubber spatula, I find that the blade cuts it. 🙁

  • I have a question about your countertops! Are they marble or quartz? I am struggling with this choice and am WAY leaning towards marble though I know there are lots of risks… what did you choose? 🙂

    These are quartz. We decided on these for our kitchen because they are SUPER stain resistant (we had them on our last home as well) and we can be messy at times. Plus we use ingredients that stain often like turmeric, citrus and red wine. I HIGHLY recommend them for the kitchen.

    We chose marble for our bathrooms. There is one vanity that came with super light marble and then a couple bathrooms where we did contrasty marble. We always double seal it in the beginning. So far the contrasty ones are holding up perfectly, but the super light one has a ring on it (just a texture wear not a stain) but it still bugs me.

    I think marble is definitely more beautiful and if you are crazy about sealing it, it can last. Definitely look at the quartz options though, for the same price they are SO much easier to care for.

  • Thanks so much for your lovely reply. I had a feeling you were going to say that– all of it. I cannot stop dreaming of marble but I know it’s risky. (Mostly because of the husband and tiny human. They don’t understand how to be careful!) I am definitely going to double seal if I end up with marble. Ahhhh such a hard choice! Thanks, again, for the reply.

    Also, in all my research I have read that etching will come off with a scrubby sponge (the thin one, not double sided) and dish soap. Might be worth a shot in your bathroom! I also think a Mr. Clean Magin Sponge might work. Good luck!!

  • Ack. A vitamix is SUPER expensive. I’m a health food nut and I still refuse to spend that much on one.

    So, if you don’t feel like spending a ton of money to do this DIY, you can 100% use a food processor. I find it odd when blogs tell you to use a specific name-brand to accomplish a process that is 100% doable with other less-expensive products.

    Anyways, if you want to make these in a food processor, “place the peanuts, salt and honey into the bowl of a food processor. Process for 1 minute. Scrape down the sides of the bowl. Place the lid back on and continue to process while slowly drizzling in the oil and process until the mixture is smooth, 1 1/2 to 2 minutes.” — From Alton Brown, The Food Network (although plenty of other places list these recipes with just food processors as well)

    I’m glad you’ve had good results with your food processor.

    I just want to chime in and say that yes, they are expensive BUT they are SO much better than any food processor or blender I have ever used. I was on the fence for years, so I totally understand the hold up, but as someone who has now been using it multiple times a day nearly every day for six months I have to say I think it’s fully worth the money.

    I also just want to say that we only represent brands on ABM that we truly believe in! 🙂
