Pineapple Upside Down Cake Jello Shots!

One of my favorite things to do is to make fun jello shots and I’ve got a great one for you today! I was thinking how pretty the top (or technically the bottom) of a pineapple upside down cake is and it dawned on me that it would be the perfect method and flavors for a jello shot, too. I didn’t know this, but apparently raw pineapple doesn’t play well with gelatin (it has an enzyme called bromelain that breaks up the gelatin), so you have to cook your pineapple rings first so they stay nice and pretty—news to me!Pineapple Upside Down Jello Shot, makes 8

1 1/4 cup pineapple juice
1/4 cup butterscotch schnapps
1/2 cup vanilla or cake vodka
2 packets of plain gelatin
fresh pineapple
maraschino cherries
silicon circle molds
Pour your pineapple juice into a pot and warm over medium heat (don’t you love that pink pot!?). When juice is warm, sprinkle in your gelatin and stir until dissolved in the juice—don’t let your juice come to a boil!While your gelatin is dissolving, use a knife to cut eight 1/2″ thick pineapple slices into circles that are just a bit bigger than your silicon circle molds. Cooking them causes the pineapple to shrink a bit so they should just fit the mold once they are cooked. Cut a smaller circle in the middle of the pineapple for the cherry (or you can use circle cutters too) and bake your pineapple slices for 3 minutes in the microwave (or cook them for a few minutes in the oven). Let the pineapple cool a bit while you do the next step.Once the gelatin is dissolved in your juice, add in your vodka and schnapps and stir together.Place your pineapple rings at the bottom of each mold and add a cherry in the middle. Pour in your juice mixture on top of each ring and place in the fridge to set for at least 6 hours. Once they are firm, you can pop them out! I also placed half a cherry on top of each one to give them a bit of height on the plate. Serve immediately.Yum!! The pineapple ring on top gives the jello shot a nice juicy flavor and the butterscotch schnapps mimics the brown sugar caramelization that occurs in the real cake as well. My husband Todd is always my jello shot taste tester and he really loved the flavors on this one. Besides how delicious they are, they look sooo pretty just sitting on the plate as well—just like the real thing! xo.   • Can I make a suggestion for the website? Put the name of the author at the top of each post. I know it might be super silly but I read posts with certain voices in my head, and I have to scroll all the way down to see who wrote what. Like, in this post, it’s food related, so I thought Emma had written it, I did’t even bother scrolling down, but then I finished it and uh oh Laura is the author! So I feel like I read the entry wrong. Does that make sense? Or when you post something misc, and I really have no idea who is talking to me (Elsie or Emma or Laura or Savannah). I can see the tags at the beggining and I have no real use for them before I read the posts (they are super useful once you’ve read the article and want something similar), I’d prefer to have the author’s name there before going into the article.

    Just a thought. Sorry for length. The pineapple looks delicious.

  • I will have to share this with my boyfriend! He would love it =o) We always get the pineapple upside down cake when we go to Roy’s, the hawaiian restaurant. This is such a great idea!
