Lately, I've been craving spicy food. Maybe it's the weather, but I've been in the mood for summer flavors. Guacamole tops my list for yummy, summer food. But since it's maybe not such a good idea to eat nothing but guacamole, I've created this little fajita salad to cure the craving.Start with a bed of mixed greens. Add a layer of chopped tomato, cilantro and green onion to the top. I tend to go a little crazy with cilantro because I love it so much.
Next, add 1/2 cup cooked quinoa, seasoned with garlic powder and fresh lime juice.Cook bell peppers and any protein you like (I used chicken and shrimp) on the stovetop with a little bit of oil. Season with your favorite spices, or a fajita seasoning mixture.Next, add the cooked peppers and protein to the top of the salad. Garnish with fresh avocado, guacamole or a little sour cream.Serve with your favorite dressing and enjoy!
To make this super easy limeade: fill your glass with ice and club soda, then stir in sweetened lime juice and sour mix to taste! (psst! You can see my recipe for homemade sour mix here) It's light and refreshing! xo. Elsie

Please stop eating scampi, it is only the biggest environmental villains that still are eating scampi. The consequences are huge and really bad. I love your blog you are so creative but you should use your big blog to spread the word about the consequences of eating scampi. Please!
