Quinoa Fajita Salad

Quinoa Fajita Salad RecipeLately, I've been craving spicy food. Maybe it's the weather, but I've been in the mood for summer flavors. Guacamole tops my list for yummy, summer food. But since it's maybe not such a good idea to eat nothing but guacamole, I've created this little fajita salad to cure the craving.Cilantro + Tomato + Green OnionStart with a bed of mixed greens. Add a layer of chopped tomato, cilantro and green onion to the top. I tend to go a little crazy with cilantro because I love it so much. 

Next, add 1/2 cup cooked quinoa, seasoned with garlic powder and fresh lime juice.Mole Poblano SpiceCook bell peppers and any protein you like (I used chicken and shrimp) on the stovetop with a little bit of oil. Season with your favorite spices, or a fajita seasoning mixture.Bell PeppersNext, add the cooked peppers and protein to the top of the salad. Garnish with fresh avocado, guacamole or a little sour cream.Quinoa Fajita Salad Recipe Serve with your favorite dressing and enjoy!
